Another day, another strawberry recipe. I can’t help it. They are so fresh and in season so I’m about to use them till I hate them. Which will probably be never because who could get sick of strawberries?

Plus (as I told you in my strawberry creme fraiche milkshake post) I sweat my butt off for these strawberries so they were getting used before they started rotting. Which, can we talk about that for a second? Those little berries started rotting the minute I took my eyes off them. I left them on the counter and the next morning I had to throw a few away. What is it about fresh berries that just hate me? What is the secret to keeping fresh berries fresh?

Must I get all Practical Magic on them and cast a spell to keep them fresh?

So in my frantic attempt to use my berries before they went to the big berry in the sky I made waffles. BUT not just any old waffles. These babies are packed with fresh diced strawberries and lightly sweetened with honey Yulu yogurt. The yogurt helps keeps the waffles light and fluffy and of course the added protein is a big plus. I also topped the waffles with even more yogurt but I’m wild and crazy like that.

Plus, who doesn’t love more yogurt?

If you have never tried Yulu yogurt before you need to get your butt to the store and pick up a container. It’s extra creamy and perfect for breakfast, lunch or even a midnight snack. These waffles use honey yogurt but feel free to substitute plain, vanilla or even strawberry yogurt.

Strawberry Yogurt Waffles

These strawberry yogurt waffles are the perfect way to start your day. These light and fluffy waffles are made with honey yogurt and fresh strawberries.

Yield: 6 waffles

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

  • 1-1/4 cup white whole wheat flour
  • 1-1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 (5.3 ounce) container honey Yulu yogurt
  • 2 eggs
  • 3/4 cup milk
  • 4 tablespoons melted unsalted butter
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla bean paste
  • 1 cup small diced strawberries

Directions:

Preheat waffle maker according to manufactures directions.

In a large bowl mix together flour, baking powder, baking soda and kosher salt, set aside.

In a medium sized bowl whisk together yogurt, eggs, milk, melted butter, maple syrup and vanilla bean paste.

Add liquid ingredients to the dry ingredients and stir to combine, fold in diced strawberries.

Cook batter in waffle maker until crispy. My KitchenAid waffle baker cooks 2 waffles at a time and I can get 6 waffles in 1 batch.

Top with additional yogurt and strawberries if desired.
