Hey, you guyyyyyyyyyyyyyyyyyyyyyys! I’m here today with the most amazing summer appetizer. This baby packs a major punch in the flavor department AND it’s beyond easy. I know, I say everything is easy but I swear I really mean it!

In the summer, I struggle to cook. I hate making my house hot and my appetite is about zero as soon as the thermometer hits 85. I’m a mess. However, one thing I’m good during the summer is drinking cold white wine and munching. I find munching (aka: snacking for dinner) is much easier than fixing a full on dinner spread. Plus with this fun summer appetizer you still get a nice dose of protein so you won’t’ be starving in 2.2 seconds after eating.

Oh and in case you hadn’t heard today is National Hummus Day! That means it’s perfectly acceptable to eat all. the. hummus. for every single meal. Ok, maybe you shouldn’t eat it for every single meal but I think lunch and dinner are perfectly acceptable. Trust me, this cajun shrimp hummus crostini would LOVE to be your dinner tonight. All you need is toasted bread, classic hummus, micro greens, cajun spiced shrimp, feta cheese and homemade cilantro pesto. I know it sounds like a lot of ingredients but it’s worth it!

Side note: I re-watched Jurassic World and I think I might be the only person I know who really liked this movie. I mean, I don’t want to live in a world where raptors are running around and sure as hell don’t want to go to an “amusement park” where they are running around BUT I’ll watch the heck out of a movie about it. Plus – Chris Pratt is beyond handsome. Even though I still view him as Andy Dwyer – awesomesauce.

Cajun Shrimp Hummus Crostini

This cajun shrimp hummus crostini is the perfect summer appetizer. Toasted bread topped with hummus, microgreens, spicy cajun shrimp, cilantro pesto and a sprinkling of feta cheese. Hello, summer!

Yield: 10 crostini

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

For crostini:

  • 20 medium-sized shrimp, cleaned
  • 1-2 teaspoon cajun seasoning
  • 1 tablespoon olive oil
  • 10 crostini-sized slices of bread, toasted
  • 1 container Sabra classic hummus
  • Microgreens
  • Cilantro pesto
  • Feta cheese

For cilantro pesto: 

  • 1 cup packed cilantro leaves and stems
  • 2 cloves garlic
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons olive oil
  • 1-2 tablespoons water
  • Kosher salt and pepper, to taste

Directions:

For crostini:
In a small bowl add shrimp and toss with cajun seasoning. The amount of seasoning will depend on a few things - how salty your seasoning is and/or how spicy. The spice blend I used is light on the salt so I can use 2 teaspoons without making it too salty. Please taste your blend before seasoning so you don't make the shrimp too salty.

In a medium sized skillet add olive oil and place over medium-high heat. When the oil is hot add in the seasoned shrimp and cook until the shrimp slightly curls up and is pink in color. Remove from the heat and set aside while you assemble the crostini.

Lay out your toasted bread and spread with equal parts Sabra classic hummus. Then top with the desired amount of microgreens, 2 shrimp per crostini, a drizzle of cilantro pesto and crumbled feta cheese. Serve immediately.

For pesto:
Add cilantro, garlic and lemon juice to a small blender or food processor. Puree and slowly stream in the olive oil and 1 tablespoon water while the processor is running. Taste the pesto and season with kosher salt and pepper. Thin out the pesto with more water if desired.

Haha! I LOVED the Jurassic World movie! Chris Pratt being in it certainly didn't hurt. ;) And I love this appetizer idea! Perfect for summer evenings on the back deck with a bottle of wine.
