These chipotle bbq pulled pork stuffed sweet potatoes are packed full of spicy slow cooker bbq pulled pork and topped with a runny fried egg. Finish with a sprinkle of cilantro and say hello to dinner.

Sooooooooo my slow cooker is toast.
Let the sadness settle over the room…sigh. I was washing the crock and I heard a weird noise. Thinking it was nothing I continue to wash and then suddenly felt a crack on the side.
Fuuuuuuuuudge.
The thing I loved the most about my old slow cooker was the fact that it held 7 quarts.
It was so big it would hold just about anything. There was no soup recipe too large for that workhorse. Also {cue the sad face} they no longer make my slow cooker anymore. Ugh.
Since I’m now begrudgingly in the market I guess I should ask – what’s your favorite slow cooker?

Luckily before I broke my slow cooker I made this pulled pork.
Actually, I made the pulled pork a few weeks ago but froze half. Sometimes when I’m on my game I can remember to actually freeze half of the food I make in bulk.
When I forget we end up eating the same food for 4 days straight. Then my husband and I both go from “I love this!” to “OMG if I have to eat this dish one more time I swear to gah I will lose it!”
Ok, that was slightly overdramatic but you get it.
After I unfroze my pulled pork I decided that instead of throwing it on a sandwich I was going to stuff it inside a baked sweet potato.
I love the combination of spicy meat and sweet fluffy potato.
Then I threw on a fried egg because it makes EVERYTHING better! The sprinkle of cilantro on top gives a nice burst of fresh flavor that this hearty dish totally needs.
Random: I just found out my husband is not a fan of cilantro. What! How did I get married to a man who doesn’t like cilantro…

Totally random but doesn’t that first picture of the broke yolk look like a river of yolky happiness drizzling down the side of that potato. I want to river raft on that yolk river.

BBQ Pulled Pork Stuffed Sweet Potatoes

Equipment
Ingredients
For pulled pork:
- 4 pound boneless pork shoulder, fat trimmed
- 1 yellow onion, sliced
- 1-2 chipotle peppers, diced
- 1 12 ounce can ginger ale
- 1-2 cups BBQ sauce
- 2 teaspoons smoked paprika
For sweet potato:
- 4 large sweet poatoes
- 4 teaspoons olive oil
- 4 large eggs, fried
- Chopped cilantro, for topping (optional)
Instructions
For pulled pork:
- In a 6 quart slow cooker add pork shoulder, yellow onion, and chopped chipotle pepper. Pour in ginger ale and cook on low for 5 hours.
- Once the pulled pork is tender and can easily be shredded with a fork it's ready.
- Pull the pork roast out of the slow cooker, add to a large plate and shred with two forks.
- Pour out the juice from the slow cooker and add shredded pork back to the slow cooker.
- Add in 1 cup BBQ sauce and smoked paprika and stir.
- Add more BBQ sauce if desired or needed. You want the meat to be coated but not dripping with sauce. Cover to keep warm while you prepare your sweet potatoes.
For sweet potatoes:
- Preheat your oven to 425 degrees F and tear off 4 (20-inch long) pieces of foil.
- Stab the sweet potatoes all over with a fork and place 1 potato in the middle of each piece of foil.
- Rub each potato with 1 teaspoon olive oil and wrap up in foil.
- Add the potatoes to a baking sheet and bake for 45-60 minutes until the potato is soft.
- When you're ready to serve unwrapped the potato, cut down the middle, mash the inside of the sweet potato, stuff with pulled pork, top with a fried egg, and sprinkle with cilantro.

My husband “doesn’t like” cilantro either but if I don’t tell him it’s there, he doesn’t even notice it. Men are annoying.

Hi Biaca! You need some sort of liquid to cook your pork in and I really like the subtle flavor and sweetness of ginger ale. You can substitute with stock if you’re not a fan of soda.
‘Twas never a sight lovelier than these stuffed taters. Except maybe the broken yolk on top of those taters. YUMMERS.

This dish looks amazing…I’d have to sub out chicken or beef for the pork but I think either would work pretty well. The fried egg really takes it over the top!
