I LOVE using spicy ginger beer with pork because I think it gives such a great flavor to the meat.
It’s sweet and spicy and pairs perfectly with chipotle.
If I can’t find a good ginger beer I also really love using Vernor’s ginger ale because it’s the best ginger ale on the planet.

I think the best thing about these spicy tacos is the cool and creamy slaw that gets piled on top.
I have always been a slaw on my tacos kind of girl but it gets even better when that slaw is spiced with smoked paprika. Which, as you all know, is my favorite spice.
I also have pretty hard opinions on the fact that I definitely think these tacos should be served with corn tortillas.
While I LOVE me some homemade flour tortillas they just don’t belong in my homemade taco world. These ginger beer pulled pork tacos need corn tortillas.

Ginger Beer Pulled Pork Tacos
Ingredients
For ginger beer pulled pork:
- 2 large yellow onions sliced
- 1 5 pound boneless pork butt
- 1 12 ounce bottle Jamaican ginger beer
- 3 tablespoons ketchup
- 2 tablespoons apple cider vinegar
- 1 tablespoons Worcestershire sauce
- 1 tablespoon kosher salt
- 1 tablespoon smoked paprika
- 2 teaspoons ground pepper
- 1 teaspoon cumin
- 1 teaspoon chipotle chile powder
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon Dijon mustard
For slaw:
- 1 16 ounce bag coleslaw mix
- 2/3 cup mayonnaise
- 3 tablespoons whole milk
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/4 teaspoon chipotle chile powder
For tacos:
- Corn tortillas
- 1 bunch cilantro stems removed
- 2 limes cut into wedges
Instructions
For ginger beer pulled pork:
- In a large 6 quart slow cooker add sliced onions and top with pork butt.
- Pour in ginger beer.
- In a small bowl whisk together ketchup, apple cider vinegar, Worcestershire sauce, kosher salt, smoked paprika, pepper, cumin, chipotle chili powder, chili powder, garlic powder, and Dijon mustard.
- Pour homemade sauce over pork butt, cover, and slow cook on high for 6-8 hours.
- Flip the pork butt halfway through cooking.
- When the pork is tender remove it from the slow cooker and shred with two forks.
- Add pulled pork back to the slow cooker and stir to combine.
- Keep warm while you prepare the tacos.
For slaw:
- In a large bowl add all ingredients and mix together until creamy.
- Cover and let sit in the refrigerator until you’re ready to make your tacos.
- Taste before servings and season with salt if needed.
For tacos:
- Set a small skillet over medium-high heat and toast corn tortillas. Each side should take about 30 seconds.
- To assemble tacos layout corn tortilla, fill with pulled pork, top with slaw, and sprinkle with cilantro and a squeeze of lime.

This recipe is the kind of recipe that makes Taco Tuesday a total fail for me. Wanna know why? Because I want to eat these tacos on Mondays, Wednesdays, Thursdays, Fridays, Saturdays, and twice on Sundays.
