Want to my newest obsession? Unbreakable Kimmy Schmidt on Netflix. I told myself that I would not binge watch all of the episodes but I totally failed after 3 days. Even my husband tried to slow me down but I couldn’t be stopped. I’m the worst.

Plus the theme song keeps getting stuck in my head so I walk around the house signing it at the top of the lungs. I’m pretty sure my husband thinks I’m even crazier than normal. Which is pretty hard to beat since I’m pretty much just a giant ball of weird.

One of my other obsessions is chicken thighs. I swear I cannot get enough of their deliciousness. I know I have talked about my love of chicken thighs before but their amazingness keeps growing on me. It always stays tender and I honestly do think the flavor kick the butt out of boneless skinless chicken breast.

Sorry breasts. You’re out. Well, unless your used in sandwiches…or fried…or smothered in cheese.

Ok, so I love them both BUT thighs are still my favorite.

I guess this means if I were a man I would be a leg man over a boob man? I even allowed to say that if I’m talking about chicken? Does this make me even weirder?

I have a feeling my dad is reading this post right now totally rolling his eyes. He is also probably muttering “Geez kid. How did you turn out so weird? You probably got it from your mother.”

It might be helpful if I tell you about the dish too. You know, since it’s a food blog and all.

If you’re a fan of citrus and herbs this chicken dish is totally up your alley. I used 3 types of citrus (orange, lemon and lime) and a punch of fresh rosemary and thyme. Then you make a quick marinade and roast it up until the chicken skin is super crispy {THE BEST PART!} and the kitchen smells like a citrus heaven.

Yield: 2-4 servings

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour 15 minutes

  • 4 chicken thighs, bone-in and skin-on
  • 1 orange, 1/2 juiced and 1/2 sliced
  • 1 lemon, 1/2 juiced and 1/2 sliced
  • 1 lime, 1/2 juiced and 1/2 sliced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons fresh thyme leaves
  • Kosher salt and pepper, to taste

Preheat oven to 400 degrees.

Leave the skin on the chicken thighs but trim off any excess skin or fat and set aside.

In a medium mixing bowl add orange, lemon and lime juice. Whisk in olive oil, minced rosemary and thyme leaves. Add in chicken and toss to coat in juice and spices.

In a 8x8 casserole dish add citrus slices to the bottom.

Place chicken onto the top of the citrus slices and pour marinade over the chicken.

Season the tops of the chicken with kosher salt and pepper.

Roasted for about 60 minutes until the top of the skin is crispy and the chicken is fully cooked or has reached 160 degrees.

Remove chicken from the oven and let rest for 5 minutes and serve hot.

Oh man, this is one of the best looking recipes I’ve seen in a while! I’m usually a breast chick, but I may convert over to a thigh girl with this one. Yum! I can smell the citrus now.

I feel bad for not even having heard of the show. Lol. Maybe I should check it out! If it’s as good as these thighs look, it must be a winner! Pinned 🙂

I keep seeing that show pop up on my Netflix recommendation, which is weird since I am into sci-fi and such, but I will admit, it intrigues me! I have made a very similar recipe and what I love is that it uses cheap parts of the chicken, but does not lack in flavour!

The skin on those looks ridiculously good. YUM. I don’t make thighs often, but these might just change the tides on that.

I am SO BAD about binge watching shows! I cannot control myself! I watched all 7 seasons of The West Wing in an embarrassingly small amount of time! I’m going to blame it on the fact that Netflix auto plays the next episode instead of the fact I have no self control! hahaha!

And I am loving this roasted chicken! The citrus flavors are just perfect!

I keep seeing people talking about that show but I’m trying to save it for when I’m stuck in a hotel room with all 3 kids and both dogs next month. Gahhh, I really, really, really want to watch it!

I make some thighs similar to this but yours look so crispy and delicious! We’re totally thigh people so I’ll be trying this soon!

I said adios to chicken breasts a few years back. Unless, like you said they are in a sandwich or fried. Otherwise dark meat all the way! I will have to check out that show, we are finishing up SOA right now and wondering what we should watch after. Thanks for the recommendation!
