It’s over. No more hot and sexy Don Draper. I won’t give you any spoilers since I’m sure some of you are still waiting to catch up online or DVR style. I don’t want to be the asshat that starts talking about all the big events in a season finale the minute after it happens. But really with social media nowadays I feel like it’s hard to keep ANYTHING a secret.

Actually {and I feel like this is pretty amazing} I have never seen Lost but have managed to keep the ending a secret to myself. I’m not sure I will actually watch Lost anytime soon but the way everyone talks about how the ending was the “worst ending in the history of ever” {direct quote from a friend} I want to hold out. Yeah, don’t be a jerk and leave a comment telling me how it ends.

Please.

I made these little chicken curry salad phyllo cup bites when my mom was visiting and they were a HUGE hit. They are perfectly seasoned and super creamy thanks to the tangy Greek yogurt addition. Of course you could always use mayonnaise if you wanted too but I really like the vibe of flavors with yogurt.

The crunch in this dish comes from the use of my most favorite Athens mini fillo shells. They only need to be crisped up in the oven for about 5 minutes and then you just fill them up with curry chicken salad and call it a day. How easy is that for a Memorial Day appetizer?

You could also totally make these and eat them for lunch or dinner. Just because they look fancy doesn’t mean they take forever to make. In less than 30 minutes you can go from “I’m going to eat my arm if I don’t get food” to “sweet baby j these things are delicious!”

Curried Chicken Salad Phyllo Cups

These little curried chicken salad phyllo cups are packed full of Greek yogurt, curry spice, cilantro and green onions. Then it's all packed into a crunchy phyllo cups for the perfect party appetizer.

Yield: 30 appetizer bites

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 12 ounces cooked shredded chicken breast
  • 1/4 - 1/3 cup plain Greek yogurt
  • 1/4 cup currants (or raisins)
  • 2 tablespoons minced cilantro
  • 2 tablespoons minced green onions
  • 1 tablespoon curry powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 boxes (30 cups in total) Athens mini fillo shells

Directions:

In a large bowl add all ingredients except mini fillo shells.

Stir to combine. Taste the mixture and add more seasoning or Greek yogurt if desired. Keep refrigerated until ready to fill cups.

Preheat oven to 350 degrees, add fillo shells to a baking sheet and cook for about 5 minutes just to brown and crisp the shells.

Let the shells cool and fill with prepared chicken curry salad.

  1. I love those mini fillo shells and they are so perfect for an appetizer! Totally with you on using the yogurt in this recipes too, mayo might work but I bet it’s a whole new ball game with the yogurt!
