This fig goat cheese salad with fig vinaigrette is the perfect late-summer salad. Packed full of fresh figs, goat cheese, pistachios, and a homemade fig vinaigrette.

Summer is almost over but I’m not ready to say goodbye to salads.

Every single summer I go through a period of major salad craving where I will happily eat it for every single meal.

Yes, that includes breakfast.

I’m a freak. I know.

But, this salad is like none other.

It’s packed with fresh sweet figs, creamy goat cheese, and salty pistachios and drizzled with a homemade fig vinaigrette.

I don’t know why I had never thought to make a salad dressing out of fresh figs but I’m damn glad I finally decided to.

Super simple and easy to make right in your blender or food processor. Plus it’s so good that I put it on just about everything. Not even kidding. Everything*

*Everything salad based. I didn’t put it on toast or cereal. I’m not that much of a freak.

Actually, speaking of my freakiness I have a confession.

Apparently, Netflix now has Girl Meets World and I have totally been watching it.

That’s right. I’m a 33-year-old woman watching a show targeted at 10-year-old girls.

I mean I loved Boy Meets World and it has the original Cory and Topanga so how am I not going to watch it?

I feel if I didn’t watch it would actually be a crime.

It’s at this point in my life that I realize I should not be allowed to be an adult.

I’m basically just a large child with power. Who apparently still like to watch shows for kids.

If you find yourself watching Girl Meets World and need a salad to munch on you should most definitely sit back, relax and enjoy this baby.

PLUS it’s a great excuse to eat all. the. goat. cheese.

Because who doesn’t want a reason to eat goat cheese and figs?

Ingredients 

For salad:

  • 6 cups baby arugula
  • 1 cup quartered fresh figs
  • 1/2 cup chopped salted pistachios
  • 1/2 cup crumbled fresh goat cheese

For vinaigrette:

Instructions 

For salad:

  • On a large salad plate or bowl add arugula and top with fresh figs, pistachios and goat cheese.
  • Drizzle and toss with fig vinaigrette.

For vinaigrette:

  • In a medium sized saucepan set over medium heat add olive oil. Once the oil is warmed add in figs and shallot. Sauté until the shallots and fig begin to soften.
  • To a blender add the saucepan mixture, honey and balsamic vinegar. Blend on high speed until mostly smooth. While the blender is running slowly pour in olive oil. At this point the mixture will be thick. You can use water to thin it out or use it thick. Whatever you like.
  • Let the vinaigrette cool and use for salad. {There will be a bit of leftover vinaigrette}
