This open-face BBQ chicken burger with peach corn salsa is the perfect summer burger. Ground chicken mixed with smokey spices and BBQ sauce, all cooked to perfection, served on Texas toast, and topped with sweet and savory peach corn salsa, cotija cheese, and crispy fried onions.

Ahhhhhhhh, peach season! I think I need an intervention about my peach consumption. Every single time I go to the store, I pick up a few and then eat them in about 2.2 seconds when I walk through the door. There is seriously nothing better than a fresh summer peach.

Obviously, with my love for peaches, I threw them into this burger. I made the most delicious salsa by combining fresh summer sweet corn, peaches, cilantro, and just a squeeze of lime. Then, I made a burger patty out of ground chicken, BBQ sauce, cilantro, and lots of smoked paprika. THEN I put all of that on top of a piece of Texas toast, adding crumbled cotija cheese and a few crispy onion pieces.

Basically, I just made the most rad burger of the summer. If this were an Oscar-award-winning movie, I would be Rose, the burger would be Jack, and I truly would never let go.

I made this burger for Burger Month hosted by the lovely Kita of Girl Carnivore. Her only requirement was to make a delicious burger. I think I managed to do this. PLUS, it’s an open face, so you can pile on the toppings and not feel bad about how messy you’re about to get. Bust out your fork and knife and start munching away.

Now, I know burgers are usually served between two pieces of bread, but this burger is best served open-face. And it’s not just any open burger; it’s an open-face burger on Texas toast. So it’s like double the delicious bread flavor.

Seriously, who wouldn’t want that?!

BBQ Chicken Burger with Peach Corn Salsa

Ground chicken mixed with smoked paprika, chili powder and bbq sauce all cooked up to perfection, served on Texas toast and topped with sweet and savory peach corn salsa, cotija cheese and crispy fried onions. You'll have a hard time not wanting to eat this burger all summer long!

Ingredients 

For burgers:

  • 1 pounds ground chicken
  • ¼ cup chopped cilantro
  • ¼ cup BBQ sauce
  • ¼ cup panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 4 pieces frozen garlic Texas toast
  • ¼ cup crumbled cotija cheese
  • 4 tablespoons crunchy fried onions

For salsa:

  • 2 tablespoons unsalted butter
  • 2 cups sweet corn kernels
  • 2 whole peaches, pitted and diced small
  • 1/4 cup chopped cilantro
  • 1/2 fresh lime, juiced
  • ¼ teaspoon kosher salt

Instructions 

For burgers:

  • In a large bowl, mix together ground chicken, cilantro, BBQ sauce, smoked paprika, chili powder, and kosher salt and form into 4 equal-sized patties.
  • Set a large non-stick pan over medium heat and add in 2 teaspoons olive oil. Once the oil is hot add in the patties and fry until bottom is brown, flip and continue cooking until the patties are fully cooked. The inside of the burger should be at least 165 degrees F.
  • Toast the Texas toast according to box directions, top with chicken burger, salsa, cotija cheese an crunchy fried onions.

For salsa:

  • In a large skillet set over medium high heat add butter. Once the butter is melted and hot add in the sweet corn and saute for about 5 minutes until it starts to soften. Add in peaches and continue cooking just until the peaches soften.
  • Remove from the heat and toss in cilantro, lime juice, and kosher salt.

  4. Open faced burgers are, in my opinion, the best way to eat a burger. That way, you can enjoy the flavor of the burger and all of the delicious toppings. This burger sounds so good, I love all the flavors!!
