Sometimes I find myself annoyed if I can’t come up with a new recipe. I live in this world where I feel like as a blogger it’s my duty to come up with new and fun recipes. Who wants another recipe for a chocolate chip cookie? Aren’t there enough of those?

When I was asked to try out the new Nestlé Toll House DelightFulls™ I racked my brain trying to figure out a new and inventive dessert. I wanted something to make my readers happy and to show off my flashy recipe development skills.

After I thought about it for a while I decided to go against my desire to be different. I thought about my mom. I thought about when I was a kid and the time we spent together in the kitchen. We would make up a huge batch of dough and make tray after tray of warm delicious chocolate chip cookies. Of course I would steal bites of dough and she would mumble something about how I’m not supposed to eat raw dough.

What can I say. I like to live life on the edge.

So I went into the kitchen and took a trip down memory lane. I made a simple brown sugar filled dough and threw in some small dark chocolate chips and the peanut butter stuffed DelightFulls™. Since I wanted to change it up (and didn’t feel like making sheet after sheet of cookies) I opted to instead press the dough into a small jelly roll pan.

After I pulled my cookies out of the oven I let them cool and cut them into bars. They were soft, chocolaty and had just a touch of peanut butter flavor. Even though they were simple they reminded me of being a kid in the kitchen with my mom.

They reminded me of home.

Peanut Butter Stuffed Chocolate Chip Cookie Bars

These peanut butter stuffed chocolate chip cookie bars are bursting with lots of peanut butter deliciousness. Serve warm with a big glass of cold milk.

Yield: 1 (15x10) jelly roll pan

Ingredients:

1-1/4 cup all purpose flour
1 cup white whole wheat flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup unsalted butter, room temperature
1-1/2 cups dark brown sugar
1 teaspoon vanilla bean paste
2 large eggs
1 package peanut butter Nestle DelightFulls
​1 cup mini dark chocolate chips

Directions:

Preheat oven to 375 degrees and spray a 15x10 jelly roll pan with non-stick spray.

In a medium sized mixing bowl whisk together all purpose flour, white whole wheat flour, baking soda and kosher salt. Set aside.

In the bowl of an electric mixer add butter and brown sugar. Mix together until light and fluffy, about 2 minutes.

Pour in vanilla and mix to combine.

Add eggs, one at a time, to the mixture and combine fully after each addition.

Slowly add in flour until completely combined. Scraping down the sides of the bowl if needed.

Stir in DelightFulls and mini chocolate chips.

Press dough into the prepared jelly roll pan and bake for about 25 minute until the edges and top are lightly browned.

Let cool and cut into bars.
