I cannot get enough of ricotta toast. I eat it for breakfast, lunch, and sometimes even dinner. To make myself seem fancy I try to top it with all sorts of deliciousness – tomatoes, basil, strawberries, etc. You get the point, it’s damn delicious.

For this recipe, I took the simplicity of ricotta toast and made it look all fancy but really it’s still super easy. Warm roasted grapes are spooned over ricotta topped toast to create the perfect-looking party appetizer.

Or lunch.

Or dinner.

Again, you get the point. You can eat this dish at ANY time of the day and be in heaven.

If you have never roasted grapes before don’t worry they are awesome. I was a little unsure the very first I had them. I’m not a huge (read: I hate them most of the time) fan of raisins and for some reason I was sure these would taste like raisins. Let me calm your fears – these do not taste like raisins.

I’m so insane with my preconceived food thoughts. These really taste like good decisions and winning at life.

If that were an actual descriptor for flavor.

I also highly recommend using fresh high quality ricotta for these babies. I know, I sound just like Ina with my “high quality” comment but for real. Don’t buy the stuff out of the plastic container. Head over to the cheese section and buy the super fresh house made ricotta. It will be 100% worth it.

Fresh ricotta literally tastes rich milk with just a hint of salty deliciousness. That flavor mixed with sweet roasted grapes is the best thing to happen since the cast of Full House announced it is making a netflix show called Fuller House.

You can serve these little bites still warm from the oven or let the grape mixture hang out for a few hours before serving. It’s really up to you and no one will judge you. Ingredients 

  • 1 pound seedless red grapes, removed from the stem
  • 6 pieces fresh thyme
  • 1 tablespoons extra virgin olive oil
  • Heavy pinch kosher salt
  • Fresh cracked pepper
  • 12 small slices toasted bread
  • Fresh ricotta cheese

Instructions 

  • Preheat your oven to 400 degrees F.
  • On a rimmed baking sheet add grapes, thyme, olive oil, kosher salt, and pepper. Mix together until the grapes are coated.
  • Roast in the oven for about 20 minutes or until the grapes have started to shrivel and have released some of their juice.
  • Let the grapes cool slightly while you prepare the crostini.
  • Lay out toasted bread and spread each piece with the desired amount of ricotta. I prefer around 1 tablespoons per slice. Top each slice with a spoonful of roasted grapes, a crack of fresh pepper, and a few fresh thyme leaves if desired.

I had a salad this weekend and it came with two pieces of ricotta toast – thank goodness because it saved me from saying “oh no you DON’T” to the Southern husband.
