This strawberry goat cheese quinoa salad is the perfect addition to your summer menu. You’re going to love how light and flavorful this dish tastes!

During the summer I eat so much salad it’s not even funny.
Normally I just take a giant bowl of lettuce, throw on some leftover vegetables and then top it all with a fried egg.
Sweet Baby J, I could eat a fried egg on top of almost anything and it would make me the happiest lady in all the land.
My dad is grossed about by this but he is totally wrong.
Fried eggs make the world a happy place.
Am I right?

Speaking of happy places.
Normally I would consider the grocery store my happy place.
Sometimes I get frustrated while shopping but for the most part, I can run in, find exactly what I need, and check out.
It’s calming to me to know everything will always be in its place.

This salad is filled with peppery arugula, creamy goat cheese, hearty quinoa, and sweet summer strawberries and topped with crunchy sprouted grains.
The dressing could not be simpler and it’s super smooth since I whipped it up in my Vitamix.
Summer is my time to be smitten with berries. How can you not love them this time of the year?

Your salad looks amazing! Love all the flavors. Bring on summer!
This is such a pretty salad. I love strawberries so very much, I cannot get enough of them when they are in season.
I am so sorry some mean girls ruined your day. Accidents happen, there’s no sense in berating people. You didn’t deserve that. You just have to know you’re a good person and their opinions mean nothing. xx
I’m sorry that happened. I will never understand mean people. But this recipe! Oh my word this looks AMAZING!
Oh man, I could eat this salad all day every day! Looks awesome!
Ugh, it’s called an accident! I hate when people get so uptight about it. I mean, I’m sure you tried to run over the pregnant lady. Yeah, that sounds right. GIANT eye roll on that one. Oh well. There’s this salad to make up for it! Goat cheese and quinoa are the way to my heart!
What a beautiful salad! I love goat cheese,
This salad is absolutely beautiful…right up my alley! But what’s not right up my alley are the rude ladies in the parking lot. I’m impressed you were able to put up with them yelling for 3 minutes. I probably would have been yelling right back at ’em. Of course, that’s not the smarter move…some people are so rude!!
Oh man, what an awful group of women. I am so sorry you had to put up with their issues. Wow, that’s bad. I’m glad that gentleman was nearby and willing to step in to help you!
Your salad, my friend, that’s good enough to set a whole lot of things right. It looks delicious.
I’m so sorry that happened to you. As I always said to my kids while they were growing up, nobody plans on an accident. They just happen.
On a brighter note, your photos are always so stunning, Brandy! This salad looks delicious!
This salad is so gorgeous!
