Sometimes I like to shock my husband with the enormous sandwiches I can make.  He made a comment one afternoon that my idea of making BLT’s wouldn’t fill him up. So since we hadn’t eaten breakfast {I’m a horrible wife who often just skips making breakfast until both of us are hangry for lunch} I decided I would combine the two.

I got into the kitchen and I made these HUGE ultimate sandwich just to prove to him that a BLT could in fact fill a person up. Let’s just forget about the fact that I also added cheese, double egg and avocado. Plus I used tons of Jones Day Farm bacon because I feel like if you are going to put bacon on a sandwich you may as well do it right.

There is seriously nothing more than annoys me than a sandwich that is topped with minimal bacon. Get it right or pay the price.

The other thing I loved about this sandwich was that it totally kept me full for hours. I made it all the way till dinner before I thought I needed to eat again or I would die.

Ok, that’s a tad dramatic but I can seriously go from “no I’m not hungry” to “OMG give me food now I’m feeling stabby!” I should probably work on that.

Ultimate Breakfast Sandwich

This ultimate breakfast sandwich is packed full of egg, cheese, bacon, avocado, lettuce and tomato. Say hello to breakfast!

Yield: 2 servings

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Ingredients:

  • 4 slices sourdough bread
  • 6 slices Jones Dairy Farm bacon
  • 4 large eggs
  • 1 avocado
  • 4 slices cheese
  • 4 slices tomato
  • 1/2 cup lettuce

Directions:

Toast sourdough bread and set aside.

In a large skillet fry up bacon until crispy and once fully cooked place on a paper towel lined plate to drain off oil.

Remove all but 2 tablespoon bacon grease from the pan.

Crack all 4 eggs into pan and break the yolk. Flip the eggs once until fully cooked. (If your pan is small just do 2 eggs at a time)

Mash avocado and spread avocado on 1 side of each slice of bread. Assemble sandwich as follows:

Overtop the avocado add 2 eggs, 2 slices of cheese, 3 slices bacon, 2 slice tomato and 1/4 cup lettuce. Top with remaining slice of avocado sliced bread. Continue until all sandwiches have been made.
