I woke up the other day with a sinus infection. Seriously? I have never had a sinus infection before until last May and now I’m getting another one in less than 2 months? What the hell body. What. The. Hell. Luckily I’m going to the doctor today so she can either hop me up on antibiotics or tell me it’s viral and I just have to wait it out.

Whatever. She better give me drugs because my nose hurts so bad I can barely wear my glasses. I don’t play around with my eyesight. I gotta see yo!

In an attempt to get my sinus infection to go away I went out on the lake the other day with Gina. I thought maybe a day in the sun would somehow just kill the infection. Obviously my understanding of medical care is slim to none.

So while my infection is still going strong I did have a blast on the lake. I barely got in the water because I’m basically super high maintenance when it comes to nature BUT it was so gorgeous. We went out on the boat where I enjoyed the breeze and the undying urge to jump into the water. Of course my overthinking got the best of me and I ended up not jumping in the water. Sigh.

I wish I was one of those people who didn’t overthink EVERYTHING. These are the thoughts I had when I was thinking about jumping in the water.

  • “What if I jump into the water and there just randomly happens to be something in the water that I hit and then I’m paralyzed?”
  • “What if I jump in the water and something brushes my leg and it’s a dead body?”
  • “What if someone let a pet gator free and it grabs my leg while in the water?”
  • “What if I get into the water and then I can’t get my fat body out of the water and I’m stuck there forever.”
  • “What if I jump in the water and a boob pops out and everyone just sees my boob?”
  • “What if I slowly try to get into the water but while I’m going down the ladder I somehow tip the boat?”
  • “What if I’m out swimming and then I get left out in the middle of the lake like the movie ‘Open Water’?”

As you can see I’m a bit of an over thinker. I like to think of every possible think that could go wrong and how I could fix it. Unfortunately for me the only fix I found to my problems was to just not get into the water. So I watch everyone be brave in the water while I sat on the boat drinking cheap beer and keeping Gina’s dog calm.

I’m such a winner.

After I got home I made myself this salad (2nd time eating this baby in 2 days!) and rubbed aloe all over my pink skin. If you’re looking for the perfect summer salad this is basically the thing of your dreams. It combines sweet summer peaches, salty feta cheese, sweet praline pecans and a totally delicious peach puree vinaigrette. If you don’t know how to make a peach puree it’s super simple – add 2 peaches to a blender and puree until smooth. That’s it!

How freaking easy is that?

Also if you’re watching your waistline this summer I’m happy to report I used Truvia in the vinaigrette to add just a touch of sweetness without all calories. The amount you add it totally dependent on the sweetness of your peaches so add a little at first and add more if needed or desired.

Peach Feta Salad with Peach Vinaigrette

This peach feta salad with peach vinaigrette is the perfect way to celebrate summer. Baby greens, fresh peaches, feta, red onion, praline pecans and perfectly sweet peach puree vinaigrette.

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 15 minutes

Ingredients:

For salad:

  • 6 cups mixed baby greens
  • 2 peaches, sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup chopped praline pecans
  • 1/2 cup crumbled feta cheese

For vinaigrette:

  • 1/2 cup peach puree
  • 1-2 tablespoons white balsamic vinegar
  • 1/2 teaspoon Truvia Sweetener
  • 1/4 - 1/3 cup olive oil
  • Kosher salt and pepper, to taste

Directions:

For salad:
In a large salad bowl add mixed greens and top with peaches, red onion, chopped praline pecans and feta cheese.

Drizzle with desired amount of vinaigrette and toss to combine.

For vinaigrette:
In a small bowl whisk together peach puree, balsamic vinegar and Truvia.

Slowly drizzle in olive oil while whisking. If the mixture is too thick drizzle in a little more olive oil.

Season with kosher salt and pepper to taste.

    Oh man. As a gal that loves the water, I hardly ever get in! My family loves to laugh about it. When I was little, I would get a bucket of water and plaec it on the deck and put my feet in it. Instantly cooled off. No need to get in the lake. Some things never change…

    LOVE your posts especially since I feel we are kindred spirits. I am also an over thinker food blogger AND think about all those things every time I get into the lake. I’ve also been trying to get a peach salad recipe up on my blog for weeks but my children keep eating the peaches before I can prep them (I need to find a secret spot to hide my blogging food). Thought I had a golden opportunity yesterday after I scored some good looking peaches at the farmers market. But they were clingstone peaches and I couldn’t separate them properly to grill. So…back to the drawing board for me. LOVE the peach feta combo!

    oh my gawd, girl. . you are hilarious. . I would have had the same thoughts about jumping into the lake except the boob one. I’m not blessed with the boobage so nothing would be falling out anywhere. .     Ugh about the sinus infection! I’m in the same boat…I got a cold earlier this week (seriously, who catches cold in summer?! Apparently me) and now I think it’s turning into a sinus infection. I feel your pain!

    So I’m totally with you on overthinking everything. I’d probably have had most of those same thoughts about getting in the water at the lake.     I’m SO with you on the over thinking – I’m pretty sure I haven’t swam in a lake for 6 out of the 7 reasons you listed. The pet gator dilemma never crossed my mind before… so nope, never getting in a lake ever again. Nope nope nope.

    As for the recipe, this must be fate, because I just picked up some peaches yesterday. I’ll have to make eat this salad while enjoying the fact that I live in a land locked state 😀

    sinus infections are the devil! I’ve got one right now and since I was at the beach last week in the sun, my doctor told me that it would take a while to go away because being in the sun lowers your ability to fight off stuff! What the heck! I always thought sunshine was good for you haha. OH and yeah, I have the same fears about swimming in a lake..or the ocean! ps. Love the peach salad! I just got some peaches from the farmers market last weekend and I’ve been looking for ways to use them up!

    Ohh NO. I struggled with sinus infections for many years before ultimately having to have surgery to get them under control, and they are just horrid. Sometimes, I couldn’t even get out of bed!     I’m with you – lakes freak me out! I mean, I love sitting in a lounge chair next to them or being on a boat, but actually getting in? Might trigger a panic attack. I’ll take a crystal clear swimming pool any day.
