The first time I had this dip was a few years ago when my best friend brought it to a party. It was so delicious that I could. not. stop. eating. it.
I swear I kept running back to the pan and dipping my chips. It was heaven!
In fact, my dad loved it so much he just took a scoop and threw it on his plate. Then he ate it straight.
I mean I love that dip a lot but maybe not that much.
That’s a lie. I would probably eat this plain. I mean it’s got bacon, and cheese, and more bacon.
You get it – it’s awesome.
I think it’s great when simply served with crispy potato chips but my favorite way is with french fries. It’s literally like eating a GIANT baked potato in dip form.
It’s so freaking amazing I don’t even know what else to say.
Except that you should make it.
Obvi.
Now we all know I used french fries as my dipper but not just any french fries.
I used Alexia 98% fat free crinkle cut fries.
They cook up in no time and get a crisp little outside with soft potato inside.
Plus they’re a little bit better for you than traditional fat fried potatoes.
I know the Super Bowl is coming up (it almost landed on my birthday but I lucked out!) and I’m pretty sure if you made this dip you would be LOVED by all! I
n fact, everyone might actually forget about the football just to eat this dip!
Well, unless you’re really really really into football.
I wouldn’t know that feeling since I’m really just in the Super Bowl for the food, halftime shows, commercials, and puppy/kitten bowls.

Try my baked apple butter ham and cheese sandwiches, steak fajita phyllo bites, blistered shishito peppers, creamy chicken taquitos or my baked southwestern chicken egg rolls.
Warm Loaded Baked Potato Dip
Equipment
Ingredients
- 8 ounces sour cream
- 8 ounces cream cheese room temperature
- 1 cup shredded sharp cheddar cheese divided
- 6 strips of bacon cooked till crispy and chopped
- 3 green onions green tops cut thinly
Instructions
- Preheat oven to 350 degrees F.
- In a medium-sized mixing bowl add sour cream and cream cheese. Mix together until smooth and combined.
- Add in 3/4 cup shredded cheese, the majority of the bacon, and the majority of the sliced green onions. Stir together until combined.
- Add the dip to a small casserole dish, smooth out the top, and top with remaining shredded cheese.
- Bake for about 30 minutes until the cheese is melted and the dip is bubbly around the edges.
- Remove from the oven and top with remaining bacon and sliced green onions. Serve with warm french fries or crispy potato chips.

I made this dip for my baby shower a year ago. It was a hit! Since then I have made cheese balls for 3 holidays following this recipe, just let it Get to room temperature to mold, then returned to fridge! I used less sour cream to maintain firmness. One of those times I used almonds on the outside of the cheese ball, another time I shaped it like a 3D Christmas tree and used the green onions and mini Pepperoni as the garnish. This dip is simply delicious.
On another note, I do find it quite strange that 3 of these Comments on the recipe reference dipping Potatoes into potatoes? There are no potatoes In this recipe except for what you dip with.. Intriguing... this recipe doesnt need fake reviews! It's good on its own.

I so never would have thought to use fries like that. We love their sweet potato fries never tried the crinkle kind.
