Ok, so just went and took a few of my favorite things and mashed them up! I mean, we all love waffles and we all love donuts so why not just throw them together and get a party started? Of course, since I’m working with Musselman’s this year I also decided to not just make them any old waffles NOPE they are apple butter waffles! Hello, delicious!

Now, I know there is this whole “donut or doughnut” controversy and honestly, I’m a donut girl. Maybe it’s a midwest thing but I just prefer it spelled that way. Even if it wrong or whatever else people try to tell me. I’m  wild card. You can’t hold me and my donut loving ways down.

ANDDDDDDD since it’s almost Easter time I know all of you are freaking out about what to bring to Easter brunch. Well, I think apple butter waffle donuts is just what your brunch spread needs. These babies are perfectly spiced and packed with just the right amount of donut sweetness.

I used my Belgium waffle maker to make these waffles and it worked out perfectly. I made little mini waffles buy just added a spoonful of batter right into the middle of the waffle maker instead of filling it all the way up. BUT you don’t have to do that if you don’t want too. You can just make a normal waffle and break them into fours. It’s about the same thing. I just wanted to be all adorable for the post so I opted to make them mini.

Oh, and if the weather is nice I love frying my foods outside on my deck. It just helps with that gross frying smell, you know?

Apple Butter Waffle Donuts

Ingredients

For waffles:

  • 2 cups white whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup whole milk more may be needed
  • 1/2 cup Musselman’s apple butter
  • 1/4 cup maple syrup
  • 2 tablespoons melted butter
  • 2 large eggs

For donuts:

  • Vegetable oil

For glaze:

Instructions

  • Preheat your Belgian waffle maker.
  • In a large mixing bowl whisk together flour, baking powder, and salt set aside.
  • In a medium-sized mixing bowl whisk together milk, apple butter, maple syrup, melted butter, and eggs.
  • Pour the liquid into the flour mixture to stir to combine. If the mixture seems too thick thin out with more milk until you reach the desired consistency.
  • There are two ways to make your waffles for your donuts – you can scoop a little bit of the mixture into the middle of the waffle make (not filling it completely) and make mini waffles OR you can fill it up to make a full-sized waffle and just break the waffle into 4 pieces along the division lines. The choice is up to you.
  • Cook your waffles according to manufacturer directions and let cool. If you decide to make mini waffles remember they will cook a bit faster than full-size waffles.
  • This recipe should make about 5 full-size waffles or about 20 mini waffles.
  • After you have made all your waffles fill a high-sided pan with 3 inches vegetable oil.
  • Bring the oil to 365 degrees F.
  • Once the oil is hot add in about 4 waffles at a time and fries for about 5 seconds on each side just to help crisp them up and bring them to a dark golden brown color.
  • Continue frying your waffles until they are all fried.
  • In a large bowl whisk together powdered sugar, milk, and vanilla bean paste. The mixture will be thick but not as thick as frosting. If it appears too thick simply thin out with a bit more milk.
  • Dip waffles into the glaze and let on a rimmed baking sheet to let the glaze harden.
  • Serve the same day as making.
