Baked Spinach Bacon Dip

This baked spinach bacon dip is the perfect party snack. Packed full of spinach, crispy bacon, cream cheese, sharp cheddar cheese, and green onions. This dip is so easy you’ll want to make it every single weekend! PLUS it’s ready in just 30 minutes!

The weather is cold, the days are getting shorter and I’m putting all my tank tops away.

Well, I’m not really sure if a dip can be “on check” but it is.

Maybe I should say the dip is on fleek. Yes, on fleek. Wait, are people still saying “On fleek?”

Sigh, I’m too old to go around trying to sound like I get the youth of America and their ever changing lingo. 

Noooooow when you make a dip like this you need something for dipping.

Baked Spinach Bacon Dip

Ingredients

  • 6 slices thick cut bacon cut short ways
  • 8 ounces cream cheese room temperature
  • 8 ounces sour cream
  • 2 cups shredded sharp cheddar cheese divided
  • 2 cups chopped frozen spinach defrosted and water squeezed out of the spinach
  • 1/3 cup sliced green onion
  • 2 cloves garlic grated
  • Kosher salt and pepper to taste

Instructions

  • Preheat your oven to 400 degrees F and spray an 8×8 baking dish with non-stick spray.
  • Add your bacon to a small skillet and cook until crispy, drain and set aside.
  • In a bowl of an electric mixer add cream cheese, sour cream, and 1 cup of shredded cheese.
  • Mix until combined.
  • Add in most of the bacon (saving a little for the top), spinach and most of the green onion (saving a little for the top), garlic and mix until combined.
  • Season with kosher salt and pepper if desired.
  • Add the mixture to the prepared baking dish and cover the top with the remaining cheese.
  • Bake for about 20 minutes or until the cheese is browned on the top and the dip is hot.
  • Sprinkle the saved bacon and green onions on the top and serve with pita chips.

Hi Nina - YES! I often times make it the day before the party and then bake later. I usually up the baking time a bit because the filling is cold. Enjoy!
