Who’s got some overly ripe bananas lying around? I know I always do!

But sometimes, you want more than just basic banana bread. 

Sometimes I like to switch it up and make a delicious Sourdough Discard Banana Bread.

But other times, I still want that warm banana flavor, but with a crispy topping, and this banana bread crisp recipe hits the spot!

This banana bread crisp gives you everything you love about banana bread–the warm, moist, banana flavor–and combines it with a perfectly crumbly, crispy top. 

And the best part is, it’s super easy to whip up!

Ingredients for banana bread crisp

  • All-purpose flour – A simple cake ingredient that helps hold your cake together.
  • Brown sugar –  Brown sugar adds moisture and a sweet molasses flavor, unlike traditional white sugar.
  • Cinnamon – A traditional spice found in banana bread.
  • Milk – This adds moisture to our crisp. Feel free to substitute with alternative milk.
  • Melted butter – This is the fat in this banana bread crisp. It will give the crisp moisture.
  • Bananas – Make sure your bananas are super ripe for this recipe!
  • Rolled oats – This help provide the chewy and crispy topping to our banana bread crisp. 
  • Pecans – If you don’t have pecans on hand, feel free to use walnuts! Nuts help bring a crispy crunch to our topping.

Additions and toppings for banana bread crisp 

Feel free to get creative with the addition of fun flavors like chocolate or peanut butter chips, dried fruits like raisins, and other nuts like cashews or even macadamia! 

I like to serve this banana bread crisp with a big dollop of whipped cream.

Other great options for a topping are a drizzle of honey, a sprinkle of powdered sugar, or a scoop of ice cream!

This dessert can last covered, in an airtight container, for up to 3 days.

Ingredients 

For batter:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 4 tablespoons unsalted melted butter
  • 3/4 teaspoons baking powder
  • 1/2 teaspoons cinnamon
  • 1/4 teaspoons kosher salt
  • 2 ripe bananas, sliced 1/2 inch thick

For crisp topping:

For serving:

  • Powdered sugar, optional
  • Whipped topping, optional

Instructions 

For batter:

  • Preheat the oven to 375 degrees F and spray a 9×9 pan with non-stick spray, set aside.
  • In a bowl add flour, brown sugar, milk, melted butter, baking powder, cinnamon, and kosher and mix together until combined.
  • Add batter to the prepared pan and top the batter with sliced bananas.
  • Top with crisp topping and bake for about 35 minutes or until the bread is fully cooked and the topping is lightly browned and crisp.
  • If desired, serve with powdered sugar or whipped topping.

For crisp topping:

  • In a medium-sized bowl add brown sugar, flour, unsalted butter, baking powder, and kosher salt. Mix until crumbly and stir in rolled oats and pecans.

  1. The comfort food is the only good thing about the cold weather! Oh, and I’ve had the heat on for many many weeks now LOL I can’t stand being cold! I’m a wimp.
