Confession time. I don’t really like pecan pie. It’s sweet and gloppy and just too much…everything. Now, I’m sure you are all wondering why I made a pecan pie bite recipe. Well, here is the thing. I think these are a million times better. They are bite size (proven fact bite size food always tastes better) and not overly sweet. The nuts are simply glazed in sweetness instead of laying on top of a thick sweet layer.
Oh and I’m sorta obsessed with these little phyllo cups. They bring a nice crunchy texture to the pie bites, more than any pie crust can bring to the party. Plus the chocolate drizzle just makes it even better. Anything drizzled in chocolate is delicious….am I right?
The sad news for the day is that today marks the end of Pie Week. I had such a delicious week sharing my pies and my fellow bloggers pies. It was a delicious week but sadly all good things must come to an end. Don’t worry though. I have lots more deliciousness coming your way 🙂


Chocolate Drizzled Pecan Pie Bites
Sweet and delicious chocolate drizzled pecan pie bites. Made inside mini-phyllo cups so they are bite-size and perfect for after Thanksgiving dinner.
Yield: 15 pie bites
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Ingredients:
3/4 cup chopped toasted pecans
3 tablespoons dark brown sugar
3 tablespoons golden syrup (or dark corn syrup)
1 egg
2 teaspoons melted butter
1/4 teaspoon vanilla paste
Pinch of kosher salt
1 packages (15 count) mini-phyllo shells
1/2 cup melted semi-sweet chocolate
Directions:
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a small bowl add pecans, brown sugar, corn syrup and egg. Mix together.
Add in melted butter, vanilla paste and a pinch of kosher salt. Mix together until fully combined.
Lay out mini shells onto prepared baking sheet and add 2 teaspoons pecan filling per shell.
Bake for about 20 minutes until set.
Drizzle with chocolate and enjoy.

I’m actually with you on the anti-pecan pie feelings…not that I dislike it, but it’s not my favorite. The chocolate drizzle could definitely win me over though.
These little pies are so cute! Mini desserts are so great for the holidays because it makes it easier to sample everything!
