Confession time. I don’t really like pecan pie. It’s sweet and gloppy and just too much…everything. Now, I’m sure you are all wondering why I made a pecan pie bite recipe. Well, here is the thing. I think these are a million times better. They are bite size (proven fact bite size food always tastes better) and not overly sweet. The nuts are simply glazed in sweetness instead of laying on top of a thick sweet layer. 

Oh and I’m sorta obsessed with these little phyllo cups. They bring a nice crunchy texture to the pie bites, more than any pie crust can bring to the party. Plus the chocolate drizzle just makes it even better. Anything drizzled in chocolate is delicious….am I right?

Chocolate Drizzled Pecan Pie Bites

Sweet and delicious chocolate drizzled pecan pie bites. Made inside mini-phyllo cups so they are bite-size and perfect for after Thanksgiving dinner.

Yield: 15 pie bites

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

3/4 cup chopped toasted pecans
3 tablespoons dark brown sugar
3 tablespoons golden syrup (or dark corn syrup)
1 egg
2 teaspoons melted butter
1/4 teaspoon vanilla paste
Pinch of kosher salt
1 packages (15 count) mini-phyllo shells
1/2 cup melted semi-sweet chocolate

Directions:

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In a small bowl add pecans, brown sugar, corn syrup and egg. Mix together.

Add in melted butter, vanilla paste and a pinch of kosher salt. Mix together until fully combined.

Lay out mini shells onto prepared baking sheet and add 2 teaspoons pecan filling per shell.

Bake for about 20 minutes until set.

Drizzle with chocolate and enjoy.

    1. Hi Ashley! Vanilla extract will work just as well. The paste is similar to vanilla extract except it’s a bit thicker and is full of vanilla beans. Hope you enjoy the pie bites 🙂

  4. REVIEW (so hard to come by in food blogs): I couldn’t find mini phyllo shells, so I just bought the strips of phyllo dough and broke them into squares. I then placed a few in each cup of a cupcake pan and prepared as directed. They turned out great. The chocolate drizzle is what really made them. They’re not overly sweet (as pecan pie can be), and those who are not so much dessert people (there are a few in my family) can use less drizzle, while those who respect and appreciate the awesomeness that is chocolate can use more. Thus: 5/5 stars.
