So I think (fingers crossed) Spring is finally here. The weather was gorgeous today. I opened all the windows, lit my new fruity summer Yankee Candles and smiled 🙂 I knew I had to post something today but had nothing planned or in reserves…whoops. I was going to post yesterday but the Irish Soda Bread I made was horrible. Horrible!!! I swear. It was the most vile thing I ever tasted. Not sure what I did wrong but next time I’m going to go with a different recipe. Now back to this Spring day. I wasn’t going to ruin it by slaving away in the kitchen all day so I decided to make a childhood favorite….no-bake cookies.  What is not to love about these little gems? They have an almost fudgy texture and are held together by delicious oats…yum!  Enjoy!!!

Chocolate Peanut Butter No-Bake Cookies

These chocolate peanut butter no bake cookies are the perfect summer treat. No need to heat up your oven and you get the delicious flavor of pb and chocolate.

Yield: 2 - 3 dozen depending on size

Prep Time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

Ingredients:

  • 1/2 cup (1 stick) butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 4 tablespoons cocoa powder
  • 1/2 cup peanut butter
  • 2 teaspoons vanilla extract
  • 3 cups quick-cooking oats

Directions:

Add butter, sugar, milk and cocoa powder to a 4-quart saucepan. Bring to a rolling boil and let boil for 1 minute. Remove from heat.

Stir in the peanut butter and vanilla until smooth, then stir in the oats. Drop by heaping tablespoons onto wax paper-lined baking sheets. Let cool until set.

  5. This is almost the exact recipe I make. Instead of cocoa powder I use 1 cup of chocolate chips. When you pour the hot liquid over them they melt along with the peanut butter. I’ve made a lot of different cookies and this is my favorite.
