Last week I dragged my husband to dinner with me on a Friday night. The weather was warm but the humidity was low so I asked him if it was ok to sit outside. Normally he and I are on the same page with dining outdoors – no thanks. Usually it’s just too hot and the sun is beating down on our backs. Who wants to eat like that?

However, if it’s just slightly warm and the humidity is low {this is key!} I will take every chance I get to sit outside and enjoy the weather. Since we were dining out to kick off the weekend I decided it was the perfect opportunity to try out a new cocktail. The restaurant was sporting a fun new summer drink list so I immediately went for anything that involved lemonade.

I’m such a sucker for lemonade cocktails.

Their cocktail was a simple mixture of house made lemonade and cucumber vodka. Simple, sweet and totally perfect for summer.

I woke up the next morning with the desire to pop down to the liquor store and pick up a bottle of cucumber vodka. Normally I would just make my own but I was in no time to wait. Sometimes you just need things right away.

I threw together this cocktail with the desire to recreate the previous nights cocktail but still putting my own spin on it. I’m such a lover of herbs in cocktails so I knew cilantro would go amazingly well. I had originally though about throwing in mint but the only mint I had seemed to have lost its fight with life in the crisper.

I’m so bad at using up my herbs….sigh.

This drink is slightly sweet and packed full of citrus flavor. The cucumber vodka and cilantro brings freshness to the drink to the drink that make it the perfect summertime sipper.

Cilantro Cucumber Boozy Lemonade

This cilantro cucumber boozy lemonade is the perfect summer cocktail! Full of fresh flavor and lightly sweet. Cucumber vodka never tasted so good!

Yield: 2 drinks

Prep Time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

Ingredients:

2 lemons, juiced
1/4 cup cilantro leaves, roughly chopped
1 teaspoon Truvia sweetener
2 ounces cucumber vodka
Seltzer water
Sliced cucumber
Sliced lemon

Directions:

Add a few ice cubes to a cocktail shaker and add in lemon juice, cilantro, sweetener and vodka.

Shake until the shaker is cold and the mixture is combined. When you take off the lid you should get a slight smell of cilantro. {Not overpowering}

Take 2 short cocktail glasses and fill with ice. Strain equal amounts shaker ingredients into the glasses and top with cold seltzer water.

Garnish with cucumber and lemon slices.

    This sounds ridiculously refreshing. I’m going to have to make one with the cucumber vodka I just infused! I never thought of cilantro with it, but I bet that’s so fantastic!

    I’m really bad at using up my store bought herbs too, but now that it’s summer there is nothing better than going out into the yard and snipping just what I need. My only problem now is that they go to seed far faster than I can use them. I’m sure the flavors in your cocktail and delicious! Love cilantro!
