This coconut lime frozen margarita is just what your summer ordered! PACKED full of sweet coconut flavor and jazzed up with zippy lime juice. Instead of salt, I opted to rim the cocktail with lime sugar and top it with toasted coconut.

It’s sorta embarrassing how I didn’t really think ahead when I made toasted coconut tres leches cake on Friday and then posted this today.
This cocktail tastes very similar (but with a limey zip!) to my cake from Friday.
Oh well. I’m assuming you’ll all forgive me because really who doesn’t love cake and booze?
Now, this margarita isn’t just your normal lime marg. NOPE!
This baby is packed full of sweet coconut flavor, lime zip, and then lots of booze.
Also, because I think toasted coconut is the best I put some of it on top.
Is it necessary? No.
Should you do it? Yes.
Ohhhhhh and since Cinco de Mayo is coming up this coconut lime frozen margarita is PERFECT for sippin!
Last year I participated in margarita week with Hola! Jalapeño and this year when she asked me to join I was allllllll over that! I love any party that involves a week full of margs and marg flavored dessert.
Now, things you should know about this margarita. It’s made with cream of coconut. Which is not coconut milk.
Cream of coconut is often found in the cocktail making section of the store (where you would find bitters, etc.) not in the Asian food section.
The big difference is that cream of coconut is sweetened and we want a little sweet in this marg!
It’s also crazy easy to make this coconut lime frozen margarita. You literally put all the ingredients into a blender (I used my amazing Vitamix) whip it up and BOOOOOOOM you’re welcomed to Margaritaville.
As soon as that happens it’s time to flip off the flip flops, sit back, sip the marg and enjoy your Tuesday night. Or any night really. This drink is suitable for any day of the week!

- 1 (15 ounce) can cream of coconut
- 1/2 cup tequila
- 1/4 cup triple sec
- 1/4 cup lime juice
- 1 lime, zested
- 2 cups ice
- Toasted coconut, for topping, optional
- Lime slices, for garnish, optional
- Add cream of coconut, tequila, triple sec, lime juice, lime zest and ice to a blender.
- Blend until smooth.
- Taste and add more tequila if desired.
- If desired serve topped with toasted coconut and a lime slice.
