Cranberry Apple Yogurt Parfait

These cranberry apple yogurt parfaits are the perfect addition to your holiday breakfast menu. Easy to make and full of fresh fruit, crunchy granola and tangy Greek yogurt.

I have told you all about a million times that I have a hard time getting up in the morning and eating breakfast. I’m usually hungry but the energy level is low and the food is all the way in the kitchen. Which sounds dramatic but totally true.
This simple cranberry apple yogurt parfait makes it easy for me to eat breakfast. I can make the cranberry apple mixture in advance and simply throw together the parfait in the morning. I don’t like to make them too far ahead of time only because the granola in the middle gets soggy.

The fruit mixture is not overly sweet but I did use a little Truvia to give it a little boost. While the apples were nice and sweet the fresh cranberries are always a little tart.
I also used plain Greek yogurt so I thought the fruit mixture needed a little sweetness to cut through all the tang of the yogurt. However, if you’re a vanilla Greek yogurt fan I think this would be great with vanilla yogurt too.

If you have a favorite granola recipe feel free to use it in this recipe. I made a coconut oil and cocoa nib granola for the blog a few years ago and it’s hands down my favorite. Sadly I had eaten all my granola before I made this recipe so I used some granola I bought at the store.
Cranberry Apple Yogurt Parfait
These cranberry apple yogurt parfaits are the perfect addition to your holiday breakfast menu. Easy to make and full of fresh fruit, crunchy granola and tangy Greek yogurt.
Ingredients:
- 2 tablespoons unsalted butter
- 2 large apples, diced
- 1 cup fresh cranberries
- 1 tablespoon Truvia baking blend sweetener (more if desired)
- 1 teaspoon apple pie spice
- Pinch kosher salt
- 4 cups plain Greek yogurt
- 2 cups granola
Directions:
In a large skillet set over medium heat add unsalted butter.
Once the butter is melted add apples and cranberries. Cook until the apples just start to soften.
Sprinkle on Truvia, apple pie spice and kosher salt. Continue cooking until the cranberries start to pop and the mixture is soft. You want the apples to be soft but not so soft that are falling apart.
Taste the mixture and add more Truvia if desired.
Let the apple mixture cool and assemble parfaits.
Lay out 4 parfait glasses and fill each with 1/2 cup Greek yogurt, 1/4 cup apple mixture and 1/4 cup granola. Repeat 1 more time.
Serve parfaits cold.

We do yogurt parfaits a lot, but I’ve never gone the cranberry route. Usually we stick w/ blueberries and or strawberries. Thanks for the idea!
Cranberries and apples go so well together! This is perfect for a light breakfast on xmas morning because you know that I’m all about dinner and stuffing my face with desserts in the afternoon/evening.
