This is thinly sliced chicken breast, stuffed with cream cheese that’s been seasoned with onion and garlic powder, rolled up, and baked in a spicy, chipotle, and fire-roasted tomato sauce. 

The combination of fire-roasted diced tomatoes, fresh garlic, and yellow onions creates a rich and hearty sauce for the chicken. 

I like to serve this dish over a bed of fluffy white rice, or with a side of warm tortillas. It’s the perfect meal for a cozy night in or a dinner party with friends.

Trust me, you’ll never think chicken breast is boring after trying this creamy chipotle chicken!

Ingredients for creamy chipotle chicken

For chicken: 

  • Chicken breast cutlets – These thinly sliced chicken cutlets are perfect for stuffing!
  • Cream cheese – Cream cheese will add tanginess and creaminess to the dish.
  • Spices – I’ve chosen to use garlic powder and onion powder to add savory flavors to the filling.

For sauce: 

  • Fire roasted diced tomatoes – These will add a smoky and savory backdrop to our sauce.
  • Fresh garlic and yellow onion – Classic ingredients that will add earthiness to the sauce. 
  • Chipotle chilies – These canned, smoked jalapenos in adobo sauce will add the perfect amount of spiciness to our sauce.
  • Kosher salt, black pepper – Salt and pepper are necessary spices to properly season the dish.
  • Sour cream – Sour cream will add a cool and creamy tanginess to the sauce.

What are Chipotle chiles?

Chipotle chiles are smoked jalapeño peppers. 

They’re easily found in cans in the international foods aisle of most major grocery stores, packed in adobo sauce.

The Adobo sauce is typically a sauce made from vinegar, salt, tomatoes, and spices. 

They add the perfect smoky, spicy bite to any meal!

Storage and leftovers

Any leftover creamy chipotle chicken can be stored in an airtight container in the refrigerator for up to 3 days. 

To reheat, simply place in a microwave-safe dish covered loosely with a damp paper towel and heat for 2-3 minutes or until heated thoroughly.

This creamy chipotle chicken is tender and juicy chicken breast, stuffed with tangy herbed creamy cheese and baked in a spicy tomato sauce.

Ingredients

For chicken:

  • 6 chicken breast cutlets
  • 6 tablespoons cream cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

For creamy chipotle sauce:

  • 1 (28-ounce can) fire roasted diced tomatoes
  • 2 chipotle peppers in adobo
  • 1/4 cup diced yellow onion
  • 4 cloves garlic, roughly chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup sour cream

Instructions

For chicken:

  1. Preheat your oven to 350 degrees F.
  2. Lay out your chicken cutlets and in a small bowl mix together cream cheese, garlic powder, onion powder, kosher salt, and black pepper.
  3. Spread 1 tablespoon of the cream cheese mixture on top of each chicken cutlet.
  4. Gently roll up the cutlets lengthwise and set them aside. If your cutlets will not stay closed feel free to place a few toothpicks just to keep them closed.
  5. In a 12-inch high-sided oven-safe skillet add your olive oil and set over medium-high heat.
  6. When your oil is hot add your chicken cutlets, seam side down, and brown the outside of your chicken cutlets. You do not need to worry about them being cooked all the way through as they will continue to cook in the next step. Once browned remove from the heat and make your sauce.

For creamy chipotle sauce:

  1. In a high-powdered blender add diced tomatoes, chipotle chilies, onion, garlic, kosher salt, black pepper, and sour cream.
  2. Blend until smooth and creamy.
  3. Pour sauce over the browned chicken and add the skillet to the oven.
  4. Bake uncovered for 30 minutes or until the middle of the chicken is 165 degrees F when tested with an instant-read or meat thermometer.
