This fluffy cream cheese frosting is the BEST! It’s light, not too sweet and has hints of vanilla bean and almond. It’s a great all around frosting that will work on everything from cupcakes to cookies. If light fluffy frosting is your thing this recipe is for you!
I’m almost 37.
Well, depending on when you read this post I very well may have already turned 37.
Every year I wait to feel awful on my birthday and normally I feel fine. I guess, I just assumed one of these days I would have some sort of “OMG I’M GETTING OLD” birthday freakout.
So far I’ve been good.
I mean, I’m not thrilled about being 37. I don’t feel like I look like I’m 37. I don’t feel 37. And I most certainly don’t feel old enough to almost be 40.
Yes, another year of me whinging about how I don’t feel as old as the number tells me I am.
I’m assuming the day I feel as old as the number is the day I have my massive birthday breakdown.
Yikes.
In advance.
But, until that day comes when I’m all sobbing in my bed I’m going to live. it. up.
Art got me tickets to see John Mulaney and Pete Davidson so I’m PUMPED!
John Mulaney is one of my favorite people to see live and I have a feeling it’s going to be one hell of a show!
Plus, as a birthday present to myself, I got tickets to the Schitt’s Creek Up Close & Personal tour. I’m going with my BFF and I’m BEYOND EXCITED!
I get to see Dan Levy in person – YES!
Alright, I guess I should tell you about this frosting.
It’s so crazy light and fluffy and not overly sweet. That is exactly how I always want my frosting.
I hate when frosting is so sweet it hurts your teeth.
Not cool.
The interesting thing about this frosting is that it uses granulated sugar instead of powdered sugar.
Don’t worry – it’s not gritty.
My mom gave me this recipe and when I questioned her use of granulated sugar she was all “don’t sass me and don’t use powdered sugar because it will make it too sweet.”
Got it. Moms are always right.
Right?
You can really customize the fluffy cream cheese flavoring but my personal favorite is a mix of almond extract and vanilla bean paste.
You know my love for vanilla bean paste.
I actually looked in my pantry the other day and realized I had 6 full bottles of the stuff.
I think an intervention might be needed.
Oh, and I will 100% own up to the fact that I used an obnoxious amount of sprinkles. Well, technically I used nonpareils but I hate saying that term because it sounds bougie AF.
What can I say? I love sprinkles. (or nonpareils but I still refuse to use that word)
Also, I made this fluffy cream cheese frosting because I’m helping support the Good Cookie Food Bloggers’ Valentine’s Day event that benefits Cookies for Kids’ Cancer. It’s hosted by my awesome friend Julie of The Little Kitchen and I’ve taken part in this event for the past few years and LOVE all the money it raises.
Sadly, the number 1 cause of death of children by disease in the US is cancer. Funding is needed to help further studies! That’s why I’m super happy to announce with the help of OXO, Mediavine and Dixie Crystals they are matching donations up to $3000!
