IT’S MY BIRTHDAY!

Ok, in reality, I’m not really that excited but it is my birthday.

For the past couple of years I have been making sweets for the blog for my birthday and this year I went with frosting.

I mean, how can you not love frosting?

How can you not love frosting made with espresso powder, dark chocolate cocoa powder, and mascarpone cheese?

PLUS I didn’t just give you frosting.

I slathered it on some chocolate cake, decorated it with berries, and took tons of pretty pictures.

So, I’m officially 36 years old.

I keep saying that that means I’m supposed to have my shit together but if you watched my Instagram Live Q&A you’ll know that is not true.

I used to give myself a really hard time for “not being a real adult” but I’m trying to be more kind to myself this year.

Well, actually I’ve been working on it for a while now but my 36th year is the year of me.

Hahaha, it sounds ridiculous to type that out but it’s true. It’s the year of me. It’s the year of self-care.

I feel like self-care is a super-duper buzzword lately but it’s so important.

I started going back to therapy in June and it’s made a huge improvement.

If you have never been to therapy and have been thinking about it GO DO IT NOW!

Finding someone you can connect with is the most amazing thing ever.

Also, full disclosure I get a little help from Lexapro and Adderall. I was super ashamed at first when I started medications but then I realized there is no shame in getting the help you need.

My Lexapro helps control my extreme anxiety and Adderall helps with my ADHD.

I gave a lot of thought to starting medication and I find that mixed with my weekly therapy it’s just the help I need.

For real, get the help if you need it. There is nothing to be ashamed of when it comes to trying to live your best life.

Now, after my little self-care speech, I think it’s time we talk about this espresso dark chocolate mascarpone frosting.

It’s SO FLUFFY and just slightly sweet.

Sometimes I find frosting to be too sweet and this baby is just right.

It’s packed full of rich chocolate flavor with just a hint of espresso.

I used all the frosting on this nacked cake BUT I have a feeling it would be pretty awesome on brownies. Or cookies. Or straight from the bowl.

Espresso Dark Chocolate Mascarpone Frosting

Yield: 3 cups
Prep Time: 10 minutes

This espresso dark chocolate mascarpone frosting is the perfect addition to your favorite chocolate cake, brownies, or even cookies. Super rich and fudgy with the perfect hint of espresso flavor. If you're looking for your new favorite frosting you need to give this recipe a try!

Ingredients

  • 8 ounces mascarpone cheese
  • 1/3 cup powdered sugar
  • 1/3 cup dark cocoa powder
  • 2 teaspoons instant espresso powder
  • 1/4 teaspoon kosher salt
  • 1 cup heavy whipping cream

Instructions

  1. In a medium-sized mixing bowl add mascarpone cheese, powdered sugar, dark cocoa powder, instant espresso powder, and kosher salt.
  2. Using a mixer, mix the ingredients together until smooth.
  3. Add in the heavy whipping cream and mix for another 2-3 minutes until fluffy.
  4. Make sure to scrape down the sides at least once so the frosting gets completely blended.
  5. Use on cakes, brownies, or cookies.

I'm so excited to try and make this delicious looking cake for my daughter's baby shower tomorrow. I'm up really late, so I'm going to make the icing tonight, it's 1:30 am. and I'm exhausted. I have been working on baby shower decorations all day, actually for the last week. In the morning I will bake,icing and decorate the cake and I will let you know how it turned out tomorrow evening.
