These grilled chicken meatball skewers with peppers are the perfect grilling kebab dinner. They’re easy to make with store-bought meatballs, fresh chopped bell peppers, a mix of herbs and oil, and Parmesan cheese for a delicious finish!

You know what I love about grilling?

The ease of cleanup! If I can get away with fewer dishes and scrubbing, I’m 100% going to take advantage of that option.

These grilled chicken meatball skewers (with peppers!) are the perfect summertime main course recipe. I lightly seasoned this kebab with garlic herb olive oil and served it with Roasted Tomato Sauce. Try my spicy tomato sauce (Arrabbiata sauce) if you want spicy things.

I also sprinkled on a little Parmesan cheese at the end because nothing is better than cheese. Right?

Regarding meatballs, I went with a fully cooked Italian-seasoned chicken meatball. They were in the meat section near the fully cooked chicken sausages.

You can use thawed chicken or turkey meatballs if you can’t find fresh meatballs.

You can use metal or wooden skewers. Now, if you use wooden skewers, you should soak them in water for at least an hour before grilling.

  • precooked chicken meatballs
  • red bell pepper
  • yellow bell pepper
  • green bell pepper
  • orange bell pepper
  • olive oil
  • garlic
  • fresh oregano
  • kosher salt
  • Parmesan cheese

How to make grilled chicken meatballs skewers

I love these grilled meatball skewers because they are a fabulous flavor-packed (BUT EASY) way to enjoy summer grilling. The meatballs are already pre-cooked, so you don’t have to worry about cooking them through; you’re just warming the meatballs and softening the vegetables.

Easy, peasy, and perfect for weeknight meals!

  1. Preheat your grill to medium-high heat.
  2. Thread one meatball, a few slices of peppers, another meatball, more peppers, and lastly, another meatball on your skewers.
  3. Mix olive oil, garlic, oregano, and kosher salt.
  4. Brush the oil mixture onto the kebabs and add to the grill.
  5. Grill on all sides until warmed, the meatballs are browned, and the vegetables are soft.
  6. Enjoy as is or serve over rice or pasta.

Recipe Tips

  • To keep it easy and quick, use pre-cooked chicken meatballs. These are typically found near the ham and chicken sausage in the meat department.
  • If you cannot find precooked chicken meatballs, try using thawed frozen turkey or beef meatballs.
  • Add yellow or red onion for added flavor.
  • Brush the outside of the skewers with leftover Italian dressing for an even quicker dinner.
  • Soak wooden skewers for at least an hour before grilling. This will ensure they do not burn on the grill.

Ingredients 

  • 2 (12 ounce) packages chicken meatballs
  • 1 large red bell pepper, seeded and cored, 2-inch chunks
  • 1 large yellow bell pepper, seeded and cored, 2-inch chunks
  • 1 large orange bell pepper, seeded and cored, 2-inch chunks
  • 1 large green bell pepper, seeded and cored, 2-inch chunks
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, grated
  • 2 teaspoon minced fresh oregano
  • 1 teaspoon kosher salt
  • 2 tablespoons grated Parmesan cheese, for topping

Instructions 

  • If you’re using large wooden skewers soak them in water for at least an hour before assembly. If you’re using metal skewers skip this step.
  • Before you’re ready to assemble preheat your grill to medium-high heat.
  • Assemble the skewers in the following order: 1 meatball, 3 pieces of bell pepper, 1 meatball, 3 pieces of bell pepper and 1 meatball.
  • Since there are not enough meatballs to make all the skewers 3 meatballs per piece a few of the skewers at the end will either have to have 2 meatballs per skewer or 4 meatballs.
  • In a small bowl mix together olive oil, grated garlic, oregano and kosher salt.
  • Brush the mixture over the assembled skewers and add the skewers to your preheated grill. Grill for about 5 minutes per side or until the meatballs are warmed through and the vegetables are cooked.
  • Sprinkle the skewers with Parmesan cheese before serving.
