That pretty much sums up how I spent last night. For hours I stared at a dress swearing that it white and gold and not blue and black. Then all of a sudden I saw blue and black. I know scientifically it has something to do with the way your eyes view contrast and something do with rods and cones but really I just find the whole thing weird. You think you know your colors and then BOOM – you a read a post on BuzzFeed that makes you second guess that your eyes are functioning correctly.

Just because I like to hear what everyone thinks what is your opinion on the dress color? I posted it last night to FB just to get an even wider opinion.

So what does all this dress talk have to do with kimchi fries? Nothing really. It’s just this whole dress thing is taking up all the room in my brain right now so I can’t think of anything else to write about.

It’s amazing how your brain can get consumed with one thought and push everything else you know out of your brain. It’s like when people ask me my favorite movie and I freeze as if I have never seen a movie in my life. For the record my favorite movie is Dirty Dancing. I can say this now that I’m just thinking about it and not asked on the spot.

You would think for a person with a communication degree I would actually know how to communicate.

These totally loaded kimchi fries are the best appetizer ever! Super simple seasoned stir-fry beef mixed with sauteed kimchi topped over crispy cheese covered french fries. What's not to love?

Ok. Lets talk about these fries. I have had a serious love for kimchi since I first tasted the stuff years ago. If you have never had kimchi it’s basically the Asian cousin of sauerkraut. Tangy, fermented and just a touch spicy. I actually like my kimchi very spicy but it’s hard to find that type in the store. You could also make you own kimchi if you’re lucky enough to have a good recipe on hand. If I ever get around to it I plan on sharing my own homemade kimchi recipe sometime soon!

Now, to make the topping for these fries you simply marinade some beef and give it a quick stir-fry. Then saute up some kimchi and throw it all on top of crispy fries topped with melted cheese. Then I sprinkled the top with cilantro and green onions.

Oh and that delicious sauce you see on top? Gochujang + sour cream = heaven.

Kimchi Fries

These totally loaded kimchi fries are topped with cheese, sautéed kimchi, stir-fry beef and drizzled with a spicy gochujang sour cream sauce. They are perfect as an appetizer, main course or side dish!

Yield: 2-4 servings

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

For beef:

  • 1/2 pound thinly sliced beef sirloin tips
  • 1 tablespoon sesame oil
  • 1 tablespoon low sodium soy sauce
  • 2 teaspoons brown sugar
  • 1/2 teaspoon sesame seeds

For fries:

  • 1 pound frozen french fries
  • 1-2 cups shredded colby jack cheese
  • 2 cups chopped kimchi
  • 1 tablespoon minced cilantro
  • 1 tablespoon chopped green onion

For sauce:

  • 1/3 cup sour cream
  • 2 teaspoons gochujang paste

Directions:

For beef:
In a small bowl add all ingredients and let marinate while the french fries cook.

Once the fries are done heat a pan over high heat and saute beef until no longer pink. This will only take a few minutes.

Remove beef from the pan and set aside.

For fries:
Prepare french fries according to package directions. Top with cheese and add back to oven until melted.

While the cheese is melting over the french fries quickly saute your kimchi. Using the same pan your sauteed your beef add you kimchi and quickly cook until warmed through.

Remove your cheese covered french fries from the oven and top with cooked kimchi, beef, cilantro, green onions and sauce.

For sauce:
In a small bowl whisk together until combined.

  3. haha.. I saw that on facebook last night too. I saw gold and white and hubs saw blue and black. So crazy!

    But, these fries are ridiculous! Love kimchi and that spicy sour cream on top with the beef.. strew appetizer this would be my meal. Sounds and LOOKS incredible girl. Pinned!

  4. Ha – I was the same. Totally saw gold and white, and then all of a sudden it switched to blue and black. Kind of trippy!!

    Now I just need a big plate of these fries. Love how unique these are!!

  5. Okay, the dress in the picture looks white and gold. I don’t care what anyone says is the real color of the dress. In that photo it is CLEARLY white and gold and I am now convinced that anyone who says otherwise (blue and gold is acceptable because of the shadows) is screwing with us. It’s like this huge Punkd prank and out of no where Ashton Kutcher is goin. To pop up and be like “Got you! The dress is actually green and purple!” This whole things gotten me so stressed and I don’t even know why.

    I need these fries to calm me down. Because these look like the best freaking fries ever. Seriously, I took one look and started drooling. I love kimchi and can already tell Id be addicted to these fries (what color are they by the way? Gold or black? Cause apparently my eyes aren’t good enough to tell the difference.

  6. Those fries look delicious! I’ve never had kimchi, but you described kimchi as all things I love. I’m going to keep my eye out for it. That dress. Apparently people are quite annoyed with it. lol

  7. I love kimchi and this recipe is a great way to use it! I might try it with roasted potatoes. Korean beef is so tasty too – can’t wait to try this combination.
