No Bake Passion Fruit Cheesecake

This no bake passion fruit cheesecake is the perfect balance of sweet, citrus and tart. If you have never had fresh passion fruit before you are in for a treat.

This whole winter, I complained that it lasted forever.
It was cold and snowy and, overall, just a huge drain on my personal happiness. At one point, I told my husband that if it snowed one more time, we were moving somewhere warm.
I didn’t care where we moved, just as long as a Trader Joe’s was nearby. Rational, right?
Well, the weather is starting to warm up, so now I feel like I’m about to die. It’s not hot enough to turn on the air conditioning, but my house has zero airflow, so it has difficulty staying cool.
I’m unsure why airflow is not considered when building a house, but engineers (architects?) must get on that.
My home is like a jail cell with zero breezes. Plus, at night, I’m forced (ok, forced is a strong word) to sleep at the foot of the bed with the fan blowing on my face.
I look like I belong in a bad 1980s music video with all my hair flying around. If you think I don’t know, I sound crazy, I know. I cannot handle being even a little bit hot #firstworldproblems

So, what does a girl do when roasting in her house? She makes something no bake.
No oven = no added heat.
This cheesecake is super creamy (the way I like it!) and has just a touch of lime flavor.
The delicious passion fruit on top is so over-the-top amazing that I don’t even know where to begin.
If you have never had fresh passion fruit, it can only be described as sweet and tart. It cuts the super cream cheese flavor of the cheesecake without overpowering the whole dish.
This no bake passion fruit cheesecake is the perfect balance of sweet, citrus and tart. If you have never had fresh passion fruit before you are in for a treat. Yield: 6 servings Prep Time: 15 minutes Cook Time: 0 minutes Total Time: 30 minutes plus chilling time For crust: For cheesecake: For crust: Press into a 9-inch pie plate Add the pie to fridge so the crust hardens. For cheesecake: Pour in heavy cream and start incorporating into the cream cheese mixture. It's best to start slow and work your way up in speed. If you try to go too fast at once it will make a mess. Once the heavy cream is combined turn the speed up to high and beat for about 3 minutes until the mixture is thick and creamy. Pour in sugar and continue to beat for another minutes until combined. Carefully spread the mixture on top of the crust (or into jars) and let sit in the fridge for at least 2 hours but can be left overnight as well. When you are ready to serve the cheesecake cut open the passion fruit and pour across the top of the cheesecake.
No Bake Passion Fruit Cheesecake
Ingredients:
1-1/2 cup graham cracker crumbs
1/3 cup sugar
1/3 cup butter, melted
16 ounces cream cheese
1 lime zested
1/2 lime juiced
1 cup heavy whipping cream
1/3 cup sugar
6 fresh passion fruitsDirections:
In a small mixing bowl add graham cracker crumbs, sugar and melted butter. Mix together until the mixture is moistened. or press into single serving mason jars

In the bowl of an electric mixer add cream cheese, lime zest and lime juice. Mix together on medium high speed until smooth.












Girl, I totally feel you. There’s really just NO way to win. I’ve been so fed up with winter but now, it’s 80. Where is the weeks of spring? Gone, apparently. But at least there is cheesecake. This one looks especially creamy and delicious!

I actually was into all the snow…it was kinds fun (the power outages were an adventure…cold but an adventure!) I’m loving this weather but I know in a minute I will be saying I am too hot lol! I adore these jars of goodness – perfect for a dinner party under the stars!
