Ok, so I know calling this a recipe is really stretching things but I needed to share with you my most favorite summer breakfast. I mean, in all truth I’ll also eat this for lunch, dinner, midnight snack…

I’m not going to keep going because you get the drift. I love this ricotta tomato toast. I think the most important part of a recipe this simple is quality ingredients. I use freshly made ricotta from my local market and buy super ripe summer tomatoes. While I know I could eat this toast all year round I simply refuse to eat winter tomatoes. They always make me sad no matter how tempting they look. I’m always suckered in a few times during the winter and I’m also #firtworldproblem upset.

Since I have some basil that is still kicking (this never happens because I always kill it!) I decided to add it to the toast as well. It adds even more flavor and really gives it that summer taste. If basil didn’t usually die on me every time I tried to grow it I would be eating it every single day.

A few years ago I shared my summertime tomato sandwich which tells you how much I really love tomatoes on my sandwiches. BUT weirdly only when they are the star of the show. I don’t want them on my deli meat sandwiches, or my subs, or my salads. I just want them on this toast and that sandwich.

I’m not super high maintenance but I am when it comes to my tomato consumption.

Ricotta Tomato Toast

This ricotta tomato toast is my favorite way to start the day. Crunchy toasted whole wheat sourdough spread with creamy ricotta cheese and topped with sun-ripened tomatoes, kosher salt, and black pepper. For an extra boost of flavor add some fresh basil leaves. 

Yield: 2 slices toast

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients:

  • 2 pieces whole wheat sourdough bread
  • 4 tablespoons ricotta cheese
  • 2-3 vine-ripened tomatoes, thinly sliced
  • Kosher salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves, optional

Directions:

Toast bread and spread each slice with 2 tablespoons of ricotta cheese.

Top with sliced tomatoes and desired amount of kosher salt and black pepper. If desired add basil leaves.
