This super simple roasted orange cauliflower is the perfect side dish vegetable. Plus the deep orange color is not only pretty but it provides more Vitamin A than typical cauliflower. It’s healthy, delicious, and can be used in place of any traditional cauliflower recipe.

Ok, I know this recipe is BEYOND easy but to be fair I made this and posted this back in 2011.
I wasn’t really sure what to post when I was just hobby blogging so I stumbled upon some orange cauliflower and was all “yeah, I’m gonna share this roasted orange cauliflower and blow people’s minds.”
That didn’t exactly happen BUT weirdly this post brings in a good amount of traffic so I decided it was time for a little refresh.
I was at my favorite local store when I saw they had all the colors of cauliflower and I knew I needed to roast up a batch of this goodness.
I really do think vegetables are best served roasted so this recipe is super duper simple.
We’re talking extra virgin olive oil, kosher salt, and black pepper.
So. Freaking. Easy.

I also just wanted an excuse to take a few pretty pictures of vegetables and this cauliflower is hella photogenic.
I mean, how can you not love that vibrant orange color?
It reminds me of a big chunk of cheese.
But like a really healthy chunk of cheese.

I like to roast my vegetables on a nice high heat because I love nothing more than a little brown on my veggies.
I mean, if you’re gonna roast your vegetable let’s get some color on these babies!
Plus I’m just a real fan of easy cleanup and roasted vegetables give you all the delicious flavor with a super-easy cleanup.

I remember a few years ago cauliflower was CRAZY expensive so I always scoop it up when it’s cheap for fear that it will spike again.
I picked up these heads for about $2 apiece and that’s a pretty good price in my book.
Oh, and don’t freak out too much about the little brown or blackish-colored spots that you sometimes find on fresh cauliflower.
While it is a sign that the cauliflower needs to be used as long as it’s not mushy or smells super funky you’re safe to eat it.

Roasted Orange Cauliflower

Ingredients
- 1 large head of orange cauliflower
- 2 tablespoons olive oil
- Kosher salt, to taste
- Fresh cracked black pepper, to taste
Instructions
- Preheat oven to 450 degrees F.
- Cut off florets and wash thoroughly.
- Drizzle with olive oil and season with salt and pepper.
- Toss to combine and add to a large rimmed baking sheet pan.
- Cook until golden brown 20-25 minutes making sure to stir cauliflower about halfway through roasting.

Don’t ask me why I’m Googling facts about orange cauliflower at 11 pm on a Friday night, and then leaving comments on 6-year-old recipes. But you’re incorrect to say that it “contains 25 times the level of vitamin A than white varieties.” It contains 25 percent more vitamin A, not 25 times more. That’d be a lot of vitamin A.
