Today’s drink has to be one of my top favorites. I’m a huge gin lover and even had two gin signature drinks at my wedding. This drink happens to be a play on one of those drinks. At the wedding I had a “bees knees” cocktail and this is very similar but with just a little twist.

This drink has a mixture of fresh squeezed lemons, honey, rosemary honey syrup, tonic water and of course a little gin! Plus, I love the little added sprig of rosemary. It smells amazing and rosemary always reminds me of Christmas. Cheers!

Rosemary Lemon Gin & Tonic

This rosemary lemon gin and tonic is the perfect holiday drink. Made with homemade honey rosemary syrup, fresh lemons, gin and tasty tonic. You'll love this!

Yield: 1 drink (plus extra syrup)

Prep Time: 5 minutes

Cook Time: 1 hour

Total Time: 1 hour 5 minutes

Ingredients:

For drink:

  • 2 ounces gin
  • 1/2 lemon squeezed
  • 1/2 - 3/4 ounces honey rosemary syrup
  • Tonic water

For honey rosemary syrup:

  • 1/2 cup boiling water
  • 4 large sprigs rosemary
  • 1/2 cup mild honey (I used orange blossom)

Directions:

For drink:
Fill a small cocktail glass with ice and add in gin, lemon juice and honey rosemary syrup.

Give it a stir and top off with tonic water. Add 2 lemon slices and a sprig of rosemary for garnish.

For honey rosemary syrup:
Add boiling hot water and rosemary sprigs to a bowl. Let steep for 1 hour, remove rosemary and stir in honey. Whisk until honey combines. (If the water is too cool and honey will not incorporate just simply put the mixture in a small skillet and set over a burner on low and whisk over heat until combined) Let cool before using.

Store in the fridge until ready to use.

  1. Rosemary is my favorite herb when combined with sweets! It goes so great with honey. I know I’d love it in this!

    1. Hi Cindy! Unfortunately there is not much of a substitute for tonic. It has a very unique taste. However, this drink would also work well with seltzer or possibly lemon-lime soda. It would change the taste of the drink but it would still give you the fizz. If you use the soda it might be a bit sweeter. If you try it with either one of those let me know how it tastes 🙂
