Black Garlic Mayonnaise

There is just something about spooky food that makes me smile. Especially when it’s sitting on your counter and everyone stares at it with an odd look on face and then says “what in the heck is that stuff?” That is why I was over the moon when the fine folks over at Frieda’s Specialty Produce asked me if I wanted to participate in their Spooky Food Campaign. A chance to get my own spooky food…yes please!
First up was black garlic. I had only ever heard of it but never seen it before. I was very excited to get my hands on this stuff! The cloves have been fermented and have a roasted garlic texture with hints of sweet sticky molasses flavor. I decided the best way to showcase it’s amazing flavor would be in a homemade mayonnaise. Now, I know the color of the mayo is a little odd but trust me, this stuff is good!

Black Garlic Mayonnaise
Yield: 1 cup
Prep Time: 15 minutes
Cook Time: 0 minutes
Total Time: 15 minutes
Ingredients:
- 4 black garlic cloves
- 2 large egg yolks
- 1/2 teaspoon kosher salt
- 1 cup extra virgin olive oil
- 1 teaspoon fresh lemon juice
Directions:
In a medium size mixing bowl add garlic cloves, egg yolks and salt. Whisk (the garlic is soft so it will blend) and blend together.
Very slowly add in olive oil while whisking. Start off slow, just a drop at a time until it starts to thicken and then you can add the olive oil in a slow stream.
Once all the oil is added as the lemon juice and whisk. If the mayonnaise it too thick simply thin with a little water.












I am interested in the Dragon Fruit. The name and the shape is intruiging!

Wow, already back and blogging! Did you take a honeymoon? What a nice thing to come home to–a hurricane! Hope you guys are doing OK. That black garlic is SO COOL! I want to just eat it straight…or at least try it straight. It looks so neat. The taro root and banana buds interest me most, but only b/c the black garlic isn’t listed in the products. That’s what really interests me!
