Lately, I have been thinking a lot about Ohio. I was born and raised there and moved to New York when I was 19 years old. Things seem to move at a much slower pace back home. In the summer it gets blazing hot and you can hear the cicadas clicking away in the trees. It’s the sound of summer.
We never had a pool so we would either run around in sprinklers or occasionally we would go swimming at one of the old quarries or ponds. I’m not a huge fan of swimming in “dark water” but I did love catching tadpoles and bringing them home. They always shared a spot on my nightstand right next to the lightening bugs. Do you remember catching lightening bugs? I would always use an old mason jar and stuff it with sticks and grass in hopes it would keep the lightening bugs alive all summer long. Sadly, this never happened. I would awake in the morning to find them dead. Apparently, they need more than sticks and grass. Who knew?
I’m sure you’re wondering what cicadas, swimming holes, tadpoles and lightening bugs have to do with this salad. Well, here is the thing. This sweet grape salad always makes me think of summer. It was the only time we indulged in its sweetness. Pulled from the fridge it’s creamy and sweet and the grapes just burst with flavor. It’s my hands-down favorite summer salad! Plus it’s only 4 ingredients – grapes, marshmallow fluff, cream cheese and toffee bits!

Sweet Grape Salad
This sweet grape salad is packed full of green and red grapes and made with cream cheese and marshmallow fluff. This is crazy delicious and perfect for summer BBQ's.
Yield: 2 pounds
Prep Time: 15 minutes
Cook Time: 0 minutes
Total Time: 15 minutes
Ingredients:
- 1 pound red grapes, stems removed and washed
- 1 pound green grapes, stems removed and washed
- 1 (7.5 ounce) container Marshmallow Fluff
- 1 (8 ounce) brick cream cheese
- 1/3 cup toffee bits

Directions:
Remove stems and wash and red and green grapes. Set aside.
In a large bowl add marshmallow fluff and cream cheese. Blend with handheld or stand mixer until creamy and thoroughly combined.
Gently stir in grapes and refrigerated until ready to eat. Right before you serve your grape salad sprinkle it with toffee bits.

I make something similar but use grapes (red or green) and a small bit of sour cream and mix then sprinkle with brown sugar or brown sugar Splenda Delicious and low calorie. Very refreshing summer dessert.

I make a similar version, using the grapes, small slices of celery and salted peanuts. The dressing is made of mayo and concentrated cherry juice. Really delicious. Having said that, I cannot wait to try your version; though I doubt it will last long. Can I say SCRUMPTUOUS!!!!!!!!!
