It’s snowing! Today we are supposed to get 18 inches or more of snow. Holy winter! The kids next door to me made a igloo in one of the snow banks and I’m sorta tempted to take it over. I’m not a big fan of actually playing in the snow but I could totally get into hanging out in an igloo and drinking hot cocoa. I guess the down side of that scenario is that I would I would have to steal the igloo from the kids. All of my nanny training tells me that if I did that I would be a huge a-hole.

Sooooooo since I try not to be a jerk to children I guess I will just stay indoors. I can eat bacon and drink this thyme blood orange bourbon cocktail instead. Since they are made with fresh squeeze blood orange juice it’s basically the same as your normal morning orange juice. Except the addition of bourbon. That might be slightly different. Then again I don’t know your drinking habits so more power to you if you prefer your bourbon in the morning.

Thyme Blood Orange Bourbon Cocktail

This fresh squeeze thyme blood orange bourbon cocktail is the perfect way to use up those delicious blood oranges.

Ingredients:

For cocktail:

  • 1/2 cup fresh squeezed blood orange juice
  • 1/2 cup bourbon
  • 4 tablespoons thyme Truvia simple syrup
  • Seltzer water
  • Few dashes orange bitters

For Truvia thyme simple syrup:

  • 1 cup water
  • 5 sprigs fresh thyme
  • 1/3 cup + 1 tablespoon Truvia spoonable Natural, zero-calorie sweetener

Simple syrup adapted from Truvia

Directions:

For cocktail:
In a large measuring cup mix together fresh blood orange juice, bourbon and simple syrup.

Add ice to 2 short cocktail glasses. Fill each glass half way with juice/bourbon mixture. Top with seltzer, a dash of bitters and enjoy!

For syrup:
In a small pot add water and bring to a boil. Once boiling remove from heat, add in the thyme and cover the pot. Let steep for at least 20 minutes.

Remove the thyme and stir in Truvia. The water should still be some what warm so the sweetener should dissolve. If the water is not warm you can slightly warm it on the stove before adding Truvia.

Let the simple syrup come to room temperature and enjoy. Store in the fridge. The simple syrup is best used within a day.
