Pumpkin-Butter (1)

Remember that homemade pumpkin puree I posted last week? Well here is another amazing dish you can make with that puree.  Homemade pumpkin butter. It’s sweet, full of autumn spices and utterly delicious! I enjoy eating it on fresh muffins, scones, bagels….ok, pretty much anything bread like. It’s also equally delicious eaten by the spoonful. Don’t judge me. I know I’m not the only one.

Pumpkin-Butter (2)

Homemade Pumpkin Butter:

1/2 pint of homemade pumpkin puree (you can easily use one 14oz. can of store bought puree also)
1 cup apple cider
3 whole star anise
6 whole cloves
1/4 teaspoon ground ginger
1 teaspoon cinnamon
1/2 cup dark brown sugar
1/4 teaspoon kosher salt
1/8 teaspoon nutmeg (fresh ground)
1/4 teaspoon allspice

Add all ingredients into a pot and cook on medium heat until thickened and fruit butter consistency. You want it to be spreadable but not runny. Let the butter cool and take out the whole stare anise and whole cloves.

Store in a glass canning jar in the fridge. Will keep in the fridge for a week.

  25. When I made pumpkin butter last, I basically devoured the entire batch singlehandedly. In one sitting. With a spoon. I think I need to revisit that sentiment.
