What is roasted garlic (and why it matters here)
Roasted garlic is a whole head of garlic that’s been cooked until soft, caramelized, and spreadable.
It completely changes the flavor; it’s less sharp, mellower, slightly sweet, and, honestly, kind of addictive.
In this recipe, it acts as the “sauce”, which is what makes this pizza stand out from every other chicken pizza on the internet.
My Pro Tips
Tips for the best chicken pizza
- Let your dough warm up – cold dough fights you
- Don’t overload toppings – keeps the crust crisp
- Use pre-cooked or leftover chicken for speed
- Spread the garlic evenly so every bite has flavor
- Bake hot and fast for the best texture
Variations and swaps
Once you make this once, you’ll start riffing on it.
- Add spinach or arugula for freshness
- Swap mozzarella for fontina or provolone
- Add caramelized onions for sweetness
- Use rotisserie chicken for convenience
- Finish with a drizzle of balsamic glaze

What to serve alongside
Yes, and honestly, it’s what makes this recipe weeknight-friendly.
Absolutely. Store it in the fridge for up to a week.
Yes! Leftover pulled chicken, grilled chicken, or rotisserie chicken will all work perfectly in this pizza recipe.
Nope. I don’t own one either! A sheet pan works just fine. I like to line mine with either parchment paper or a silicone baking sheet.
How to store and reheat
- Store: Refrigerate leftovers for up to 3 days
- Reheat: Oven or air fryer for best texture
- Avoid microwaving if you want a crispy crust

Roasted Garlic Chicken Pizza

Equipment
Ingredients
- 1 pound pizza dough, store-bought or homemade
- 1 boneless skinless chicken breast, diced into ½ inch pieces
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- 2 tablespoons olive oil
- 10 cloves roasted garlic cloves
- 1½ cup shredded mozzarella cheese, divided
- 1 teaspoon garlic powder
- 1 tablespoon chopped fresh oregano, divided
Instructions
- Preheat oven to 425 degrees F and prepare a baking sheet with a silcone baking liner or parchment paper.
- Work the dough until you have a rectangular shaped pizza roughly 9×13.
- In a small skillet set over medium-high heat add a little drizzle of olive oil.
- Once the oil is hot add in diced chicken and season kosher salt and pepper. Cook for 5 minutes. It's ok for the chicken to still be pink in the middle you're just getting the outside a little browned.
- In a small bowl add olive oil and roasted garlic cloves.
- Mix together until the garlic cloves are mashed and the mixture is somewhat smooth.
- Spread roasted garlic mixture over the top of the pizza dough, leaving a 1-inch border around the dough.
- Top with 1 cup shredded cheese, prepared chicken, sprinkle with garlic powder, and 1/2 of the chopped oregano.
- Top with remaining 1/2 cup shredded cheese.
- Add to the oven and cook for 15 minutes or until the cheese is browned and the dough is fully cooked. In my oven I like to cook them 18 minutes for an extra browned top.
- Remove from the oven, sprinkle with remaining oregano and serve hot.
