My poor husband eats so much asparagus that I’m pretty sure he is shocked when I don’t make it three times a week.

So, for this Parmesan asparagus recipe, I’m adding a little zest to the basic roast vegetable but adding lots of shredded Parmesan cheese!

It’s so cheesy and delicious you’ll love how well it pairs with everything from roast chicken to Air Fryer Beef Tenderloin.

Ingredients needed

  • Asparagus
  • Olive oil
  • Lemon juice
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Crushed red pepper flakes
  • Parmesan cheese

How to make Parmesan roasted asparagus

Roasted vegetables are so easy to make and turn out perfect every single time. This simple recipe gives you all that deliciousness and extra cheese goodness.

  1. Line a baking sheet pan with parchment paper and preheat your oven.
  2. Trim the ends of your asparagus and add to the baking pan.
  3. Drizzle with olive oil, lemon juice, kosher salt, black pepper, garlic powder, and crushed red pepper.
  4. Mix and evenly coat.
  5. Bake for 10 minutes, cover in shredded Parmesan, and bake for another 5 minutes.
  6. Serve warm.

  • Use fresh, firm asparagus that is about pencil-sized for the most tender roasted vegetable.
  • If you can only find large asparagus, increase the cooking time by a few minutes.
  • Leave out the crushed red pepper to cut down on spiciness.
  • If you don’t have shredded Parmesan, you can substitute shredded mozzarella, but the nutty flavor will be missing.

Instructions 

  • Preheat oven to 425 degrees F and line a large rimmed baking sheet with parchment paper or a silicone liner.
  • To the prepared pan add asparagus and drizzle with olive oil and lemon juice.
  • Season the asparagus with kosher salt, black pepper, garlic powder, and crushed red pepper flakes. Toss the asparagus with your hands until it's evenly seasoned.
  • Bake for 10 minutes, remove from the oven, sprinkle with Parmesan cheese and put back in the oven for another 5 minutes to continue cooking until the cheese is melted.
  • Serve warm.

Notes

  • If your asparagus is super thick, you will have to increase the initial baking time.
