This French hot chocolate pudding tastes like Parisian hot chocolate but in pudding form. Deep chocolate flavor with just a touch of sweetness. If you’re a chocolate lover, this dessert is for you!
There are a lot of things I love, but there is one that holds my heart – chocolate.
I’m happy to take chocolate in almost any form. Including my Vitamix Hot Chocolate, Espresso Dark Chocolate Mascarpone Frosting, down to my classic Chocolate Chip Cookie Cake.
The other day, I was craving French hot chocolate but wanted to shovel it into my mouth instead of waiting for it to cool so I could sip it slowly.
That’s why I decided to take all the ingredients you would find in French hot chocolate and turn it into pudding! Really, all this is, is a bittersweet chocolate pudding, BUT it sounds fancier to call it French hot chocolate pudding.
For serving, I sprinkled it with powdered sugar to give it a snowy appearance. I also think it would be great served with whipped cream, marshmallow cream, or a toasted marshmallow.

Ingredients for hot chocolate pudding
- Light cream – I like using light cream for this pudding because it gives you richness without too much fat.
- Cornstarch – This helps thicken our pudding.
- Brown sugar – Just a touch for rich sweetness.
- Bittersweet chocolate – I love bittersweet chocolate because it’s the perfect balance of sweet and decadent chocolate flavor.
- Kosher salt – A pinch brings out the flavor of the chocolate.
Using light cream
I’m using light cream for this recipe, which can typically be found in the grocery store’s dairy aisle. It is normally found in the area where you find heavy cream and coffee creamers.
- Light cream is 18-30% milkfat
- Light whipped cream is 30-36% milkfat
- Heavy whipped cream is 36% plus milkfat
- Half and half is 10.5-18% milkfat
If you cannot find light cream you could do a mix of half heavy cream and half half and half or whole milk.
You could do all milk or low-fat content milk, but you’ll lose the richness of the dessert dish.
Storage and leftovers
Any leftover pudding can be covered or stored in an air-tight container in the fridge for up to 3 days.
You can eat the leftovers cold or warmed.

French Hot Chocolate Pudding
Ingredients
- 2 cups light cream
- 2 tablespoons cornstarch
- 1/4 cup light brown sugar
- 8 ounces chopped bittersweet chocolate
- 1/2 teaspoon kosher salt
- Powder sugar for topping
Instructions
- In a medium-sized saucepan add light cream and cornstarch. Stir together until combined and the cornstarch is not lumpy.
- Add in sugar and chocolate and whisk to combine.
- Cook over medium low heat while whisking to combine ingredients. Gently simmer until the mixture is thick and resembles pudding in texture.
- Remove from the heat and stir in kosher salt.
- Serve the mixture warm with a sprinkle of powdered sugar.

Ok maybe dumb question but what is considered light cream..I know what heavy whipping cream isbut have never seen anything in a store called Light Cream???

I made this last night, as a 1/1 batch. It was great! Too rich for 1/2 batch to be 2 servings, I think. Would the pudding taste ok cold as well?
