This s’mores French toast is LOADED with marshmallow flavor and is the perfect special occasion sweet breakfast or over-the-top dessert. It’s thick sliced vanilla bean challah bread French toast topped with toasted marshmallows, drizzled with chocolate sauce, and sprinkled with graham cracker crumbs.

One of my favorite parts of summertime is eating s’mores by a campfire; there’s nothing more satisfying than a toasty marshmallow, sweet chocolate, and crunchy graham crackers. 

And with this french toast version, s’mores are not just for dessert anymore! 

This s’mores french toast would be perfect for a special occasion breakfast or brunch, to share with family and friends. 

You could even top it all off with a dollop of fresh whipped cream, no one’s judging you. 

Trust me, you’re going to love this French toast!

Ingredients for s’mores french toast

  • Challah bread – Challah is a sweet and dense eggy bread perfect for French toast.
  • Eggs – This will be the richness in our custard.
  • Whole milk – Whole milk provides moisture and fat to our custard.
  • Vanilla bean paste or vanilla extract – Vanilla bean paste is a super concentrated vanilla product. You could substitute vanilla extract.
  • Marshmallows – Sticky and sweet, these sugary pillows are essential for our s’mores french toast.
  • Graham cracker crumbs – We’ll need some crunch and sweet graham flavor.
  • Chocolate sauce – Feel free to use your favorite store-bought chocolate sauce to drizzle on top of our French toast stack!

Different types of bread

I’ve chosen to use Challah bread, because it is a thick, dense, eggy bread, and will give us great texture in our french toast.

Feel free to use your favorite whole grain bread, sourdough, or even white bread varieties. 

Make ahead

After cooking the french toast on the griddle, you could lay the slices onto a baking sheet and keep warm in a 200 degrees F oven, for up to an hour until you’re ready to assemble the stacks of s’mores.

Ingredients 

  • 8 thick slices challah bread
  • 2 large eggs
  • 1-1/2 cups whole milk
  • 1 tablespoon vanilla bean paste or vanilla extract
  • 1 bag Campfire® regular marshmallows
  • Chocolate sauce
  • Graham cracker crumbs

Instructions 

  • Preheat your griddle and set aside sliced challah bread.
  • In an 8×8 casserole dish whisk together eggs, whole milk, and vanilla bean paste.
  • Quickly dip both sides of the challah bread into the egg/milk mixture.
  • Add to your preheated griddle and cook until golden brown on both sides, about 7 minutes per slice of bread.
  • Add the cooked french toast to a large baking sheet. Laying each slice side by side.
  • Slightly flatten the marshmallows and place the desired amount of marshmallows on top of each slice of French toast.
  • Turn on your broiler and add the sheet pan to the oven and toast until the marshmallows are gooey and browned about 5 minutes.
  • Remove from the oven, stack 2 slices per plate and drizzled with desired amount of chocolate sauce and graham cracker crumbs.
