“You’re killing me smalls!” It’s seriously all I think of when I think of s’mores. Even if I try not to think of that quote it still weasels its way into my brain. Of course, I’m talking about the quote form the legendary (is a cult classic?) movie “The Sandlot.” OH YES! This movie was my childhood. I mean, I watched this movie a lot as a child. I didn’t mean I felt like the movie portrayed my childhood. I was sooooooo not the baseball playing kind of girl. Well, I wanted to be that girl but my fear of errrrrything stopped me from enjoying much.

We would all go to the park to play baseball and the whole thing went down like this – “Brandy, why don’t you just go stand out in the middle of the field all the way by the fence.” So there I would stand for 3 hours literally doing nothing. I’m pretty sure I could have replaced myself with a cardboard cutout and no one would have noticed I was missing. Sad, but true.

So, with all that said it should not be surprising to you that I was not a star in the baseball world. If anything I’m now a grown woman who freaks out the entire time she is at a baseball game. I sit there always wondering if the ball is going to somehow attack my beautiful face.

Wait, can I call my face beautiful? You know what, I’m owning it. I like my face. I would like to keep it free of baseball damage.

So while I was not really vying for a spot as team captain of ANY team I was pretty talented at one thing – dessert making. Listen, you don’t grow up pudgy and NOT know how to make a killer dessert spread. So while my brothers ran around like sweaty beasts I was back at home in the kitchen. I know this sound super sexist but I truly enjoyed hanging out in my air conditioned kitchen (with cookie dough!) 100% more than hanging out outside with my brothers. Why you ask? Because outside is here I would eventually lose at baseball and somehow get suckered into carrying all the gear home.

Yeah, no. I don’t play like that.

That means instead of baseball failure I excelled at s’more making. Well, really I excelled at cookie making that I then turned into s’mores. This version is super simple and is just simple peanut butter chocolate chip cookies sandwiched between dark chocolate and super toasted marshmallows. So toasted I set them on fire and watched them burn and melt.

Seriously, who else is on team “light that mallow on fire and watch it burn?” I want that bad boy burnt and melted. So. Totally. Delicious.

Oh, and I didn’t just use any old random marshmallow. Nope. I used my favorite marshmallow – Campfire Marshmallows. They are gluten free, totally delicious and super squishy. The squishy part is the important part of any marshmallow.

PLUS the great thing about this recipe is that you can make it all. year. long. Roasting marshmallows isn’t just for summer bonfires it’s something you can do anytime of the year. Light up that stove and get to roasting even in the middle of winter. Trust me, it’s like summer just swooped down from the heavens and rewarded you with delicious summer s’mores in the middle of winter.

Peanut Butter Chocolate Chip Cookie S'mores

These peanut butter chocolate chip cookie s'mores take all the flavor of a childhood favorite and kick it up a few notches! What's not to love about toasted marshmallows and dark chocolate sandwiched in between peanut butter chocolate chip cookies?

Yield: 18 cookies or 9 cookie s'mores

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Ingredients:

For cookies:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup semi-sweet morsels

For s'mores:

  • 18 peanut butter chocolate chip cookies
  • 9 squares dark chocolate
  • 9 marshmallows

Directions:

For cookies:
Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In a bowl of an electric mixer add peanut butter, sugar, egg and vanilla extract. Mix together until blended. Stir in chocolate chips.

Roll about 1 tablespoon of the dough into a ball, place on a baking sheet and flatten slightly, leaving 1 inch between cookies.

Bake for about 10 minutes or until golden brown around the edges.

Let cool and turn into s'mores if desired.

For s'mores:
Lay out 9 cookies, front side down, and top each cookie with dark chocolate.

Roast a marshmallow, put the marshmallow on top of the dark chocolate and top with a plain cookie. Squish together to create the perfect cookie s'mores.
