These homemade chicken sausage patties are just what you need for breakfast! They are made with ground chicken, fresh herbs, and juicy raspberries and are ready in just 20 minutes!

When I was a kid, we went to this sausage and pancake fundraiser dinner. It was the highlight of my year. So many pancakes. So much sausage. It was the perfect way to spend a dinner out and about.
As an adult, I love some sausage, but sometimes I’m looking for something a little leaner than ground pork.
That’s where these homemade chicken sausage patties come into play.
They are perfectly spiced with fresh herbs, sweet and tart raspberries, shallots, and garlic. Mix it all together quickly in a bowl, form it into eight patties, cook it on the stove, and BOOM. Delicious breakfast sausage.
You can definitely play around with the herbs used, but fresh sage is the perfect sausage ingredient. So, it’s my recommendation to not skip on that. Unless, of course, you’re not a fan of sage.

Making homemade chicken sausage patties
You all know I love ground chicken burgers, and that love flows into breakfast as well.
Chicken sausages are standard now, but sometimes, I want flavors that don’t exist. That’s why I make my own when I crave a flavor combo.
I had a bunch of raspberries and herbs on hand, so I threw caution to the wind and came up with these scrumptious patties. YES! I made the right choice with this flavor combo. It’s so herby, and the raspberries bring a little snap of sweetness.
- In a large bowl, mix all the ingredients minus the olive oil.
- Mix (I used my hands as I find it easier) it together and form into eight patties.
- Add the olive oil to a 12-inch skillet and heat over medium-high heat.
- When the oil is hot, add the patties and cook until fully cooked – 165 degrees F when tested in the center with a thermometer.

Homemade Chicken Sausage Recipe Tips
Ground chicken is very soft, so I’m adding panko bread crumbs to the sausage patties. This helps firm up the patties. You can also use breadcrumbs.
Add a tablespoon of extra virgin olive oil to the ground chicken patty mixture to add fat and moisture.
Switch out the raspberries for blueberries or blackberries. All will work well and bring the perfect sweet and tart flavors.
Feel free to mix and match with the herbs. Other great options are tarragon, basil, or chives.
Storage, freezing, and leftovers
I like to make these patties and eat them fresh. Because ground chicken is so lean and light, it can quickly dry out with too much reheating.
Refrigerator storage: Leftover patties can be stored in an airtight container for up to three days.
Freezing: To freeze your patties, you can cook ahead and store them in airtight containers for up to 3 months. I like to add extra olive oil to the mixture if I’m going to freeze and reheat.
Reheating: I like to cover cold (but thoroughly cooked) patties with a damp paper towel and microwave for a minute or two until warmed.

Ingredients
- 1 pound ground chicken
- ¼ cup fresh raspberries, roughly chopped
- ¼ cup panko breadcrumbs
- 2 tablespoons minced minced shallots
- 2 cloves garlic, minced
- 1 teaspoon minced fresh rosemary
- 1 teaspoon minced fresh thyme leaves
- 1 teaspoon minced fresh oregano
- 1 teaspoons minced fresh sage
- ½ teaspoon kosher salt
- ½ teaspoon black pepper

Instructions
- In a medium-sized mixing bowl, add ground chicken, raspberries, panko bread crumbs, shallots, garlic, rosemary, thyme, oregano, sage, kosher salt, and black pepper.
- Using your hands, mix together the ingredients until fully combined.
- Form into 8 equal-size patties, about 3/4-inch thick.
- Add olive oil to a 12-inch skillet and set over medium-high heat.
- When the oil is hot add the chicken patties and cook about 5 minutes on each side or until the patties are fully cooked. Patties are fully cooked at 165 degrees F when checked internally.
