If there is one thing I love it’s the combination of sweet and salty!

That’s why these bacon pancakes with apples are the perfect addition to your breakfast, brunch, or even dinner table!

I first had this combination (bacon and apples) at a fun little Dutch Pancake restaurant in Aruba.

We went there for breakfast one morning and went back 3 more times before we left. I kept getting the apple bacon pancakes because they were literally that great.

Trust me, if you love tart sweet apples combined with salty bacon this is the pancake recipe for you!

Ingredients for bacon pancakes

For bacon apple mix:

  • Thick sliced bacon
  • Apple

For pancakes:

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Kosher salt
  • Apple pie spice
  • Plain Greek yogurt
  • Whole milk
  • Eggs
  • Vanilla bean paste
  • Bacon/apple mixture
  • Unsalted butter
  • Maple syrup

Ingredients 

For bacon apple mix:

  • 4 thick slices bacon, chopped
  • 1 fuji apples, peeled, cored and thinly diced

For pancakes:

  • 1-1/2 cup all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1-1/2 teaspoon kosher salt
  • 1 teaspoons apple pie spice
  • 1 5.3 ounce container plain Greek yogurt
  • 3/4 cup whole milk
  • 2 large eggs
  • 2 teaspoons vanilla bean paste
  • Bacon/apple mixture
  • Unsalted butter
  • Maple syrup

Instructions 

For bacon apple mix:

  • In a small skillet add chopped bacon and cook over medium heat. Cook until almost crispy, drain out some of the fat, and add in apples.
  • Cook until apples are soft (but not falling apart) and bacon is slightly crispy. Set aside to let cool.

For pancakes:

  • In a large bowl whisk together flour, sugar, baking powder, kosher salt, and apple pie spice.
  • In a smaller bowl whisk together yogurt, whole milk, eggs, and vanilla bean paste.
  • Add the wet ingredients to the dry ingredients. Stir until just combined. Fold in bacon/apple mixture.
  • In a large skillet or griddle melt 1 tablespoon butter over medium heat and add 1/4 scoopful of batter per pancake.
  • Add more butter to the pan between batches of pancakes if necessary.
  • Serve with maple syrup.

  3. i simply can’t name a favorite recipe using yogurt–i tend to slip it into everything! now pancakes, i have not tried. it’s definitely worth a go, especially if bacon is also involved. 🙂

  4. no favorite recipe with yogurt as i tend to put it in many different baked goods. and of course there is eating it w/ some fresh fruit which is great also.
