These gluten free apple cinnamon waffles are packed full of warm cinnamon apples and packed into an easy gluten free waffle recipe. This is the perfect way to start the day!

I posted my first waffle recipe last week and I’m already at it again! Except this time I went sweet instead of savory. I know, totally weird to think my first waffle post was actually savory instead of smothered in butter and maple syrup. I guess I’m a rebel like that.
This version is gluten free thank to my friends at Pamela’s. I used their gluten free artisan flour blend and paired it with a little apples and cinnamon. This waffle is basically a fall romance sitting at your breakfast table. It’s seriously that good.
{I borrowed this waffle iron and I LOVE it!}

I made these waffles for my best friend when she came to visit over Labor Day. She has recently started eating gluten free and had been craving a carb filled breakfast. So, as a wonderful best friend I was happy to make her carb dreams come true.
These babies turned out light, fluffy and full of cinnamon spiced apples. They scream fall and are totally perfect for impressing your best friend. If you follow me on Instagram you will have seen a little sneak peek of these beauties. I loved the picture because it was that total “behind the scenes” feel.

Yield: 6 waffles
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Ingredients:
For apples:
2 tablespoons unsalted butter
3 apples, peeled/cored/diced small
3 tablespoons dark brown sugar
2 teaspoons apple pie spice
For waffles:
1-1/2 cup Pamela's Artisan gluten free flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoons kosher salt
1/4 teaspoon apple pie spice
1-1/4 cup whole milk
1 tablespoons apple cider vinegar
1/4 cup dark brown sugar
2 tablespoons melted butter
2 large eggs
Directions:
For apples:
Set a large sized skillet over medium heat. Add in the butter and when melted add in apples, brown sugar and apple pie spice.
Cook until the apples are soft and the brown sugar becomes syrupy. Remove from heat and let cool while you prepare the waffle mixture.
For waffles:
Preheat waffle iron.
In a medium sized mixing bowl whisk together gluten free flour, baking powder, baking soda, kosher salt and apple pie spice.
In a large mixing bowl add together milk, vinegar, brown sugar, melted butter and eggs. Whisk together until completely combined.
Add dry ingredients to wet and stir to combine. Fold in half the cooled apple mixture.
Spray your waffle iron with nonstick spray and cook waffles according to waffle iron directions.
Top with remaining apple mixture, powdered sugar, butter and a drizzle of maple syrup. Trust me, all those toppings are amazing when put together.

Cannot wait to try out these GF apple cinnamon waffles this weekend when the in-laws visit! We’ll use the apples we all picked together last weekend.
We all have celiac so I am always looking for new recipes. Thanks , the waffles so so good. I have a pancake recipe that I make all the time but this is a nice change.
I love gluten free cake.
Vegan mexican casserole….who needs bread when you’ve got corn tortillas?!
I NEED these in my life. Too perfect. Too bad my cats broke my waffle iron 🙁
Dang those waffles are beautiful! I have a waffle iron but it’s just a little crappy one that does square waffles, I mean I’m sure they taste the same but round ones always look better to me!
It’s kinda like having apple pie for breakfast! Hooray!
Why don’t I own a waffle maker?! See what I’m missing out on? You have no idea how much I want to stick my face through my computer screen and all up on these waffles!!
These look so perfect and I have never had gluten free waffles. Looks like I’ll have to change that!
My favorite Gluten Free recipe is Apple cobbler with Gluten Free biscuit dough.
