These herb marinated grilled pork chops are a simple grilling recipe great for weeknights. They are marinated in fresh herbs and garlic and grilled to juicy perfection.

I know we are gearing towards the end of summer, but there is one thing I won’t stop doing – grilling.
Grilling is the best part about living in North Carolina. I can grill all year round, and I take advantage of that. Nothing is better than firing up the grill, making dinner, and having almost no clean-up. I also love not having to heat up my house in the summer.
These simple grilled pork chops are marinated in a quick olive oil, garlic, and fresh herb marinade. I kept it simple, using parsley, rosemary, and sage, but feel free to add any of your favorite herbs, such as thyme, oregano, chives, or basil.
The best part about this recipe is that even if you’re short on time, you can still put it together with just 30 minutes for the marinade, then throw it on the grill and cook to 145 degrees F.
I like to use an instant-read thermometer when cooking on the grill because it helps ensure the meat is not under or overdone.
Adjust your grilling time based on the thickness of your pork chops. Thicker chops will take longer, while thinner chops will grill faster.

Ingredients needed
- thick cut pork chops
- kosher salt
- black pepper
- olive oil
- garlic
- fresh parsley
- fresh rosemary
- fresh sage
How to make grilled pork chops
Grilling pork chops is one of the easiest ways to use up pork and any fresh herbs you have on hand. If you’re short on time, you can let the chops marinate for 30 minutes, but if you like, you can marinate them for up to 8 hours covered in your fridge.
- Sprinkle pork chops with kosher salt and black pepper.
- Mix olive oil, garlic, and minced fresh herbs in a small bowl.
- Marinate the pork chops in the olive oil mixture.
- Cover and set in the fridge for a minimum of 30 minutes.
- Preheat your grill to medium-high heat or 400 degrees F.
- Add the pork chops, flipping halfway, and cook until the internal temperature reaches 145 degrees F.
- Serve with your choice of sides, and enjoy!

My Pro Tips

- Adjust grilling time depending on the thickness of your pork chops.
- Use boneless or bone-in pork chops. Whatever you have on hand will work well for this recipe.
- Let your pork chops rest for 5 minutes before slicing.
What to serve with marinated pork chops
There are lots of options for sides with pork chops. Growing up, we ate Instant Pot Mashed Potatoes with our pork. My mom didn’t have an Instant Pot, but we always had mashed potatoes. It’s the same, sort of.
