Apparently, college basketball is about to happen.

I mean, I’m guessing it’s been going on for a while but the whole “March Madness” thing is about to descend upon my house.

Here is the thing about sports – I don’t care. BUT I don’t care for really good reasons. When I get into sports I get very involved.

I can have zero money on the line but if I decided to root for a team and they lose I get angry.

Hulkish angry rage spews from my mouth and I go around the house muttering “whyyyyyy couldn’t they just win? How can you miss that shot?!”

Then 20 minutes later I start a movie and I’m over it.

HOWEVER in that moments before I calm down it’s so exhausting.

Seriously, dealing with myself some days is straight-up work.

So instead of dealing with brackets and picking teams that won’t crush my heart, I’m going to just stick to cooking.

I’m gonna make all the food my husband craves and I’ll sit on the couch watching re-runs of The People’s Court on YouTube while shoveling mini chicken Parmesan meatball subs into my face.

These mini subs aren’t just your ordinary meatball subs they are made with homemade chicken parm meatballs and stuffed into garlicky rolls – YASSSSSSS!

The main reason I made these subs is because I hate ordering meatball subs because they are usually like giant meatballs on a bread monster of a roll.

Soooooooo that’s why I pulled out most of the bread center so you’re left with the perfect ratio of bread to meatballs.

It’s all about balance people!

Mini Chicken Parmesan Meatball Subs

Ingredients 

  • 1 pound ground chicken
  • 1 large egg
  • 3 cloves garlic, grated
  • 1/2 cup panko crumbs
  • 1/2 cup grated Parmesan
  • 1/4 cup finely minced parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh cracked pepper
  • 1/4 teaspoon crushed red pepper
  • 5 tablespoons olive oil, divided
  • 1 24 ounce jar tomato basil tomato sauce
  • 12 mini dinner rolls, about 4 inches long
  • 2 teaspoons garlic powder
  • 1-1/2 cups shredded mozzarella cheese

Instructions 

  • In a large mixing bowl add ground chicken, egg, garlic, panko crumbs, grated Parmesan, parsley, Italian seasoning, kosher salt, pepper, and crushed red pepper.
  • Using your hands mix it all together until just combined.
  • Roll meat mixture into 1 tablespoon-sized balls. You should get about 22-24 meatballs from your mixture.
  • In a large 12-inch skillet add 2 tablespoons olive oil and set over medium-high heat.
  • Once your oil is hot add in your meatballs and brown on all sides, about 10 minutes.
  • Add your tomato sauce to the meatballs and simmer for about 15 minutes to help cook through the meatballs and cook down the sauce slightly.
  • At this point preheat your oven to 425 degrees F.
  • Using a knife cut an oval/lens shape out of the top of the dinner roll. Pull out the cut part of the roll and remove most of the insides from the roll. Set the rolls on a rimmed baking sheet.
  • In a small bowl mix together your remaining olive oil and garlic powder.
  • Brush the insides and edges of your rolls with the olive oil mixture.
  • Add to the oven and bake for 5 minutes to just help toast up the rolls.
  • Add 2 cooked meatballs into each roll and top with a little extra tomato sauce and the mozzarella cheese.
  • Add to the oven and bake for about 10 minutes or until the cheese is fully melted and lightly browned.
  • Serve hot with extra marinara for dipping. If desired, you can also sprinkle with a little fresh parsley.
