I love all things bubbly but never seem to order it out. Champagne/sparkling wine/prosecco is weirdly an at home drink. Unless of course I’m at a wedding and I’m toasting. Even then it’s just happens to be whatever sparkly beverage shows up at my table.

This fizzy delight is far beyond that. It’s a little more fancy than you traditional glass of sparkling wine without much more effort. Really if you want to get down to it this drink is just fruit puree and fizzy wine. So simple, so delicious. Plus you feel super fancy when your sipping down bubbly with a sweet sugared rim. I swear, you put a sugared rim on just about anything and it immediately makes it more amazing by 10%.

I made this sweet little mixed berry bellini because it reminds me of being on my Regal Princess Caribbean Cruise. There was a little Bellini bar on board and we would meet up before dinner just to have a drink before we got serious about our food eating. It was the perfect start to a good dinner.

Really though anytime you get to start dinner by drinking it’s ok in my book.

I made this fresh fruit puree fresh but really that just means I took some fruit and whizzed it around in the blender until it was smooth. So when I say “I made it fresh” I really mean that I blended fresh with zero cooking.

AKA: The easiest thing in the history of ever.

Also, feel free to not spill the drink all over your glass when you serve this cocktail. I just can’t pour so it bubbled over and instead of starting over I used the opportunity to take a few shots. It’s my attempt at being artsy.

Bet you didn’t know I had an artsy side.

But really it’s just a side who can’t pour without spilling over. Shhh don’t tell anyone.

Mixed Berry Bellini

This mixed berry bellini is perfectly sweet and and packed full of blueberry and strawberry flavor. Served with a sugar rim and topped with sweet sparkling wine or prosecco.

Ingredients:

For bellini:

  • White sugar
  • 2 tablespoons mixed berry sauce
  • Cold sweet sparkling wine

For mixed berry sauce:

  • 1/2 cup blueberries
  • 1/2 cup sliced strawberries
  • 1 tablespoon water (more may be needed)

Directions:

For bellini:

Wet the rim of you champagne glass and dip the rim in sugar.

Add berry sauce to the bottom of your glass and top with sparkling wine.

For mixed berry sauce:
Add ingredients to a blender and process till smooth. Add more water if you need to thin the mixture to blend.

I guess I order fizzy cocktails at brunch sometimes, but it's still pretty rare. I can totally see myself getting drunk off these at home on a random Saturday morning. So = happening.
