These no bake pumpkin cheesecake phyllo bites are the easiest Thanksgiving dessert ever. Fluffy spiced pumpkin cheesecake filled into crunchy phyllo shells and topped with spiced nuts. You’ll love these sweet little bites!

This weekend I spend my Saturday night eating ramen and watching She’s All That and Never Been Kissed with Gina. Basically the best way to spend a Saturday night. We laughed at how much we loved these movies when we were in high school and I still beamed at each and every single cheesy ending. Seriously the ending of Never Been Kissed gets me every single time. If I had to make one complaint it would be the fact that matte lipstick was every a thing. Seriously, in that movie Dew Barrymore rocks so much matte lipstick with little to no eye makeup that several times she like she could be a corpse.
I mean I’m sure in a few years I’ll look at my pictures of me wearing red lipstick and think to myself “OMG Brandy what were you thinking?” but lets face it – red lips beats matte lips any day of the week.

Of course Drew Barrymore’s late 90’s movie lipstick style has little to nothing to do with these awesome little no bake pumpkin cheesecake phyllo bites. These babies are perfect for movie nights or an even better choice for your Thanksgiving table. The best part about no bake is that you don’t have to take up precious oven space and it’s EASY!
Like super super super duper easy. I of course busted out my favorite Athens fillo shells because they give you that super crunchy shell without having to deal with actually rolling out pastry.

The filling tastes like pumpkin pie met up with cheesecake and had a delicious no bake baby. It’s super creamy, full of warm winter spices and then just to jazz things up even more I topped them with chopped praline pecans.

No Bake Pumpkin Cheesecake Phyllo Bites
These no bake pumpkin cheesecake phyllo bites are the easiest Thanksgiving dessert ever. Fluffy spiced pumpkin cheesecake filled into crunchy phyllo shells and topped with spiced nuts. You'll love these sweet little bites!
Yield: 30 cheesecake bites
Prep Time: 15 minutes
Cook Time: 0 minutes
Total Time: 15 minutes
Ingredients:
- 8 ounces cream cheese, room temperature
- 1/2 cup canned pumpkin puree
- 1/4 cup dark brown sugar
- 1 teaspoon vanilla bean paste
- 1 teaspoon pumpkin pie spice
- 8 ounces whipped topping, thawed
- 2 boxes (30 cups in total) Athens mini fillo shells
- Praline pecans, chopped
Directions:
In the bowl of an electric mixer add cream cheese, pumpkin puree, brown sugar, vanilla bean paste and pumpkin pie spice.
Mix on medium speed until fully combined and smooth.
Add in whipped topping and fold to fully combined.
Fill the fillo shells with cheesecake mixture, sprinkle with chopped praline pecans and a dusting of powdered sugar if desired.
Note: The mini fillo shells are fully cooked so need to bake. Also, you may have some leftover cheesecake filling which can be saved or turned into a pumpkin cheesecake dip!

I haven’t seen those movies in forever. Weirdly enough, my 33 year old husband loves high school movies but I’m sure he hasn’t seen those. So I see a high school movie night in our future. I so wish we had Athens here so I could make these pumpkin bites!
Those little phyllo cups are like the best thing since sliced bread. Love the pumpkin pie cheesecake idea. So nice after a big meal but you still want a little something sweet!
