These parmesan prosciutto scones are packed full of shredded parmesan, prosciutto, chives, and lots of delicious butter. They are perfect for Christmas morning!

Today, you’re going to learn all about my weird sleeping habits. I know this is the type of post you dream of reading. It’s cool – I love learning about people too.
Now, here is the thing about the way I sleep.
I hate sharing. I don’t want to share a blanket with my husband. I want my own blanket that no one can steal or pull off of me while I sleep.
So instead, I have my own method.
I have a huge king-size blanket (this blanket is the best!) that I wrap myself into (imagine a large burrito) so there is no opportunity for any cold air to enter my blanket.
Then I position myself into complete comfort and go to sleep.
Because I refuse to share, my husband pretty much does the same thing.
I’m telling you, the key to a happy marriage is separate blankets on the bed.
You’re always comfortable and never have to worry about anyone stealing your blankets. It’s a win-win.

Do you know what else is a win-win?
Scones.
Especially when those scones are savory.
Don’t get me wrong I love a sweet scone but they don’t keep me full for long.
This savory scone is packed full of Parmesan and lots of prosciutto.
It was like eating an awesome Italian sandwich in scone form.
Oh, and I didn’t stop there – NOPE! I then went and slathered those delicious scones in Challenge Butter.
Here is the thing about good butter, it actually makes a difference! Challenge butter is 100% real cream butter, it’s made from hormone-free milk and includes no additives. That means you get a fresh delicious butter flavor in every single bite.
Plus they control the process of making their butter starting at the farms and ending with the packaging. Quality ingredients are worth it!
Now, if you have never made scones before you should know they are super easy (seriously go make them right now. I’ll wait.) and full of delicious butter flavor.
And while I love mine with butter (obvs) it’s also great slathered in creme fraiche.

If it’s hard for you to find prosciutto in your area simply substitute with any other thick-sliced ham.
Although personally I think prosciutto is the way to go.
Even if you have to search every store to find it, it’s definitely worth it.

Parmesan Prosciutto Scones

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons sugar
- 4 tablespoons unsalted cold butter, cut into cubes
- 1 cup shredded Parmesan cheese, more for topping
- 1 cup chopped prosciutto, sliced 1/4 inch thick
- 1/4 cup diced chives
- 3/4 cup – 1 cup heavy cream, more for topping
Instructions
- Preheat oven to 425 degrees and line a baking sheet with a Silpat liner or parchment paper.
- In a large mixing bowl add flour, baking powder, and sugar. Whisk to combine.
- Add cold butter to the flour mixture and using a pastry blender mix into the flour until the flour is crumbly with little pieces of butter still present in the dough.
- Stir in Parmesan cheese, prosciutto, and chives.
- Add in 3/4 cup heavy cream and stir to combine.
- If the mixture doesn’t fully come together add in a bit more cream until the dough fully comes together and is a bit sticky.
- Flour a large cutting board or your counter and turn out the dough.
- Flour your hands and form the dough into a 6-inch disk and about 3/4 inch thick.
- Cut into 8 pieces and place onto the prepared baking sheet.
- Brush the tops of the scones with additional heavy cream.
- Place into the oven and cook for 20-25 minutes or until golden brown.
- After 15 minutes remove from the oven, top with a small handful of shredded Parmesan cheese, and add back to the oven.
- Continue baking until completely baked.
- Serve warm with lots of delicious butter.

I always make fun of my sister because she and her husband use separate blankets… Stevie and I are total opposites we practically sleep on top of each other (TMI?)… and sometimes have a random 4 year old at our feet or sprawled horizontally on top of us, no wonder I’m always cranky…. maybe I need my own blanket.
As for these scones, they look amazing. I don’t know why, but I never make savory scones… and obviously I need to.
