This fall-inspired turkey apple brie panini with maple Dijon mayonnaise is the perfect sweet and savory combination.

We always have turkey in our house, whether it’s leftover from our Thanksgiving turkey or cold cuts from the deli.
That is mainly because it’s an excellent form of lean protein. It can quickly be wrapped with cheese for a fast snack or used in a tasty, overloaded sandwich like this turkey apple brie panini!
Honestly, though. My favorite thing about this sandwich might be the addition of the maple Dijon mayonnaise. Talk about flavor! It pairs wonderfully with the juicy turkey, tart apple, creamy Brie cheese, and spicy arugula.
I often joke with my husband that my favorite part of Thanksgiving is having a fridge full of leftovers. They can be used in so many delicious ways.
I used my Griddler for this sandwich, making it easy to make a pressed panini. However, if you don’t own one, you can make it in a pan on the stove. Just remember, low and slow heating is the name of the game when making an excellent panini!

Turkey Apple Brie Panini Recipe Tips
Cook your panini low and slow to make the best sandwich possible. This will ensure the inside of the sandwich is melty and warmed through, and the outside is perfectly browned and toasty.
If you’re not a fan of mayonnaise, you can leave it off, BUT I think it makes for the best sandwich.
I used French Brie cheese, which can be easily found in the specialty cheese section of most grocery stores.
A tart green apple works great on this sandwich to balance the sweetness of the mayonnaise and the richness of the Brie. However, a sweet red apple will work well here too. In my personal opinion, use what you have on hand.
Baby spinach can be used in place of arugula.

Turkey Apple Brie Panini

Equipment
Ingredients
For sandwich:
- 2 slices multi grain bread
- 2 tablespoons unsalted butter
- 4 thick slices Brie cheese, 1/2 inch thick slices
- 6 thinly sliced apple slices
- ¼ pound sliced turkey
- ¼ cup baby arugula
For mayo:
- ¼ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon pure maple syrup
Instructions
For sandwich:
- Preheat panini maker to medium heat.
- Lay out bread and butter on 1 side of each slice of bread.
- Flip buttered sides over and spread on a thin layer of mayonnaise on each slice of bread.
- Continue to make the sandwich by layering on the following – 2 slices Brie cheese, 3 apple slices, turkey, baby arugula, apple slices, Brie cheese, and other slices of bread – butter side out.
- Add sandwich to panini maker and press for about 10 minutes until the turkey is hot and the cheese is melted.
- Cut the sandwich in half and dip in extra mayonnaise if desired.
For mayo:
- Whisk together and keep cold until ready to use.
